I’ve made homemade biscuits for most of my life. I’m 64 and my mom let me make my first batch of biscuits when I was 9yo. I’ve made biscuits with butter mostly and years ago with crisco. But I got my hands on some pure lard (no chemicals). So today I decided to make a batch of biscuits for my husband, my dad & I for lunch with some sauage gravy. And my husband and dad went bonkers about how awesome those biscuits tasted. My husband said they were so fluffy inside and he loved them. I have to admit I think I found my favorite way to make my biscuits 😁!!!

HUGE POT of Chilli At Home

Ingredients:

1 pound ground beef (or turkey/chicken for variation)

2 cans of beans (pinto, black, kidney, or white beans, your choice!)

2 tablespoons olive oil

1 cup chopped bell peppers (vary colors for a vibrant presentation)

1/2 cup chopped onions (diced finely for those who prefer milder taste)

2 jalapeno peppers, finely chopped (adjust amount based on desired heat level)

2 cans (28 ounces each) crushed tomatoes

2 tablespoons chili powder

1 tablespoon cumin powder

1 tablespoon fresh cilantro, chopped

Hot sauce, to taste

Salt and pepper, to taste

Step by Step:

In a large Dutch oven or saucepan, heat olive oil over medium-high heat. Add the ground beef and cook until it’s no longer pink. If using turkey or chicken, ensure it’s fully cooked through as well. Drain any excess grease from the pot.

Stir in the chopped bell peppers, onions, and jalapenos. Cook the vegetables on low heat until they soften and become tender, releasing their enticing aromas.

Now, it’s time to introduce the star ingredients that will infuse the chili with rich flavors. Add the canned beans, crushed tomatoes, chili powder, cumin powder, and the fresh cilantro into the pot. Stir well to ensure all the ingredients are thoroughly mixed.

Allow the chili to simmer on low heat, stirring occasionally. This slow cooking process allows the flavors to meld together beautifully and creates a hearty, thick texture. If the chili becomes too thick, add a little water to achieve the desired consistency.

Season with salt and pepper to taste, and for those craving an extra kick, serve with hot sauce on the side

I went back to my all purpose flour, my biscuits get taller and taste better. The self rising flour just doesn’t make as good of a biscuit for me. Sometimes easy isn’t the best way. A little country ham on top, made it that much better. These came out to 1-1/2” thick. I keep trying to send my recipe to different ones, but it won’t let me. Will keep trying.

I tried something new and decided to let my dough bulk ferment overnight. Knowing it may over ferment. It was LARGE when I woke up and deflated while I was shaping. Figured it would bake and be flat as a pancake. Had one of my best rises yet!! Also to note, I used my starter straight out of the fridge. Last feed was a week ago and I placed it in the refrigerator at peak. I’ll share a photo once I cut into it later. 😋

100g starter
500g bread flour
360g water
10g salt

Mixed starter and warm water.
Added flour and mixed well. Let sit for 45 minutes.
Added salt and splash of water, mix
Stretch and folds every 30 minutes x 3
Let bulk overnight for about 10 hours (dough temp before I went to bed was 72 degrees)
Shaped and placed in refrigerator for about an hour.

Baked at 450 for 30 minutes with lid
425 for 15 minutes without li
