1 tsp mango pepper
1 tsp pineapple pepper

Flour mix
2 cups of flour
1 cup of cornstarch
2 tbsp spice

Batter mix

For the Eggplant:
2 medium eggplant cut into 1/4 inch rounds
2 large eggs
1/4 cup of all purpose flour
1/4 cup of panko breadcrumbs
1/4 cup of grated parmesan cheese
1/2 Tsp of salt
1/2 Tsp of black pepper
1/2 Tsp of dried oregano
1/2 Tsp of garlic powder
1/2 Tsp of dried basil

For the filling:
15 oz Ricotta Cheese
2 Tbsp chopped parsley
2 garlic cloves minced
1/2 Tsp of salt
1/2 Tsp of black pepper
1/2 Tsp of dried oregano
1/2 Tsp of dried basil
1/2 Tsp of grated nutmeg

To assemble:
2 cups marinara sauce
1 and 1/2 cups of shredded mozzarella cheese
1 cup of grated parmesan cheese
