Cheesy Loaded Potato Bake with Turkey Bacon 🥔🧀
Golden baked potato rounds covered with melted cheese, crispy turkey bacon pieces, and fresh green onions.
🥣 Main Ingredients
2 lb baby potatoes, halved
2 tablespoons olive oil
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper
1½ cups shredded mozzarella cheese
1 cup shredded cheddar cheese
¾ cup cooked turkey bacon, chopped
¼ cup green onions, sliced
For the Creamy Base
½ cup sour cream
¼ cup heavy cream
1 tablespoon melted butter
½ teaspoon garlic powder
¼ teaspoon black pepper
Pinch of salt
👩🍳 Directions
➡️ Preheat the oven to 400°F and lightly grease a baking dish or oven-safe skillet.
➡️ Boil the halved baby potatoes for 8 to 10 minutes, just until slightly tender. Drain well.
➡️ In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
➡️ Arrange the potatoes cut-side up in the baking dish.
➡️ In a small bowl, mix the sour cream, heavy cream, melted butter, garlic powder, black pepper, and salt until smooth.
➡️ Spoon the creamy mixture lightly over the potatoes.
➡️ Sprinkle mozzarella cheese and cheddar cheese generously over the top.
➡️ Add chopped turkey bacon over the cheese.
➡️ Bake for 20 to 25 minutes, until the cheese is melted, bubbly, and golden brown.
➡️ Broil for 1 to 2 minutes for extra browned cheese on top.
➡️ Sprinkle with sliced green onions.
➡️ Serve hot while the cheese is stretchy and creamy.
