The Best Homemade Sourdough Bagels

Here’s the recipe used

The best sourdough bagels are soft, chewy, and so easy to make! Let them rise overnight for the perfect morning breaktast.

INGREDIENTS

1/2 cup (100g) active sourdough starter

1 cup (240g) water warmed

4 cups (480g) bread flour

11/2 (10g) tsp salt

1 tbsp (20g)honey

2 tbsp (25g) brown sugar

INSTRUCTIONS

Combine warm water, honey, and sourdough starter. Mix to combine.

Add in the dry ingredients. Knead the dough until the dough starts to come together and form a smooth ball.

Cover and let rise for 8-10 hours at room temperature (around 70 degrees).

Line a baking sheet with parchment paper.

Divide the dough into 6-8 equal pieces. Shape each portion into a round ball with your hands.

Take your time and make a hole in the center of each ball and gently spread the hole out to form a bagel shape. Place on your prepared baking sheets. Cover the pans with cling wrap or a dish towel and place in a warm place to rise for an hour.

Preheat the oven to 425 and bring a pot of water to a boil.

Add brown sugar or honey to boiling water. Use a spatula to gently drop the bagels into the boiling water one at a time, one minute on each side

Place on stone baking sheet or on parchment lined baking sheet

Add your toppings

Bake 20-25 minutes

Cauliflower mini frittatas

Ingredients:

1 cauliflower head, cut into florets

1.5 c of grated cheese

2 scallions, chopped

4 eggs

• Boil the cauliflower in salted water until fork tender

• In the meantime, mix grated cheese, scallions, salt and pepper.

• Add drained cauliflower to mixture and mash with a fork

• once slightly cooked, add 4 eggs and mix well

• Add to pan and bake 350• for 20 minutes

This recipe made 12 mini frittatas or you can add to a baking dish and just slice up once cooled.

Optional- add cottage cheese for added protein

Pasta with broccoli rabe and tomatoes is what’s for dinner tonight!

Ingredients:

3 bunches of broccoli rabe, roughly chopped
1 can of crushed tomatoes (I like to use whole tomatoes and crush them myself with my hands)
3-4 Garlic cloves
EVOO
1 lb of pasta. I used casarecce but you can use whatever short pasta you like

• Bring a big pot of salted water to a boil
• Add your broccoli rabe, and cook until wilted
• In the meantime, Saute your garlic in EVOO and add red pepper flakes
• Once wilted, CAREFULLY add your broccoli rabe to the oil and continue to cook for a minute or two and add your tomatoes and continue to cook on low while your pasta cooks.
• a minute or two before your pasta is ready, add it to your broccoli rabe mixture and cook together until it’s ready

Being a NYer we LOVE bagels! And yes Naples does have a couple of good bagel stores, but they’re actually super easy to make at home and at least you can portion and nutritional control what’s in them

Tonight’s dinner was chicken francese, the eat my family likes it

Made it less than 30 minutes, its faster than takeout 😂

Ingredients:

2-3 chicken breasts
2 eggs
1 cup of chicken stock
1 cup of wine
1-2 lemons
EVOO
Flour
Salt & pepper
Parsley for garnish

- Slice your chicken into thicker cutlets
- Season your flour with salt and pepper
- Season your eggs with a little salt
- Drizzle your pan with EVOO and add your butter
- Flour your chicken, dip in egg and then fry until golden. Don’t worry if it’s not cooked throughly. Repeat with all chicken cutlets
- Add wine to deglaze your pan, add lemon juice, bring to a boil
- Add chicken stock
- Return chicken to the pan and cover for 10 minutes or until chicken is cooked
- Add parsley and Enjoy!

Don’t forget to taste it, does it need more salt? More pepper? More lemon?

Tonight’s dinner is a family favorite! Everyone’s always in the mood for “chicken rollatini” at my house.

Here’s a super quick version, that is just a delicious in much less time! Just 7 minutes of prep time!! And that’s includes hand washing 😂

Ingredients:

2 lbs of chicken breasts
1/2 lb of ham
1/2 lb of white American cheese
Breadcrumbs
EVOO for drizzling
1/2 stick of butter!

Bake 350 for 15 minutes covered, 15 minutes uncovered. (Times are approximate since everyone’s oven is different)

Minimal prep but definitely not minimal flavor!

Such an easy dish to make!

Just season your potatoes and chicken (I used boneless skinless thighs) with salt, pepper, oregano, juice of one lemon and a little EVOO. You can also top with some cherry tomatoes if you’d like.

Bake 425 for about 40 minutes.

That’s it!! Enjoy!

QUICK AND EASY, THIS IS A FUN SPIN ON BREAKFAST, USING PRE-MADE CINNAMON ROLLS, JUICY BERRIES, AND A STREUSEL TOPPING.

INGREDIENTS
½ cup (125 mL) flour
½ cup (125 mL) oats
¼ cup (60 mL) butter, softened (½ stick)
1 tbsp (15 mL) brown sugar
1 tsp (5 mL) ground cinnamon
Oil for greasing
2 pkgs (12.4 oz./351 g each) refrigerated cinnamon rolls, cut into quarters, icing reserved
1 cup (250 mL) fresh blueberries
½ cup (125 mL) heavy cream
2 oz. (60 g) cream cheese, softened
1 lemon, zested

DIRECTIONS
Combine the flour, oats, butter, sugar, and cinnamon in a bowl. Use a fork to cut in the butter until the mixture is crumbly; set aside.
Set the Deluxe Air Fryer & Oven to CONV. BAKE for 18 minutes.
Scatter the cinnamon rolls evenly on a greased Sheet Pan, then nestle in the blueberries. Drizzle the cream on top and sprinkle with the crumble topping.
When the display says, “Add Food,” add the Sheet Pan to the oven (on the Wire Rack) and press START. Rotate the pan halfway through cooking.
Meanwhile, combine the reserved icing with the softened cream cheese and lemon zest.
Remove the pan and drizzle with the icing.

8 servings
