Hit the jackpot! A good friend in Michigan scored a few cases of Madagascar Vanilla Beans from a local store going out of business. I recieved 350 beans for $200.00. All 18 grabs of the dehydrator are full. Once dry will grind them for our new tea line. Can’t wait . The smell is amazing!!

Pantry Sunday
Dump Dinner
1 quart canned ground venison
1 quart canned spaghetti sauce
1 pint canned mushrooms, onions and bell peppers
3 crushed garlic cloves
1 tablespoon onion powder
1 tablespoon Italian seasoning
1teaspoon black pepper
2cups sharp Che cheese
2 cups grated Parmesan
2 cups cooked elbow pasta
1 block cream cheese cubbed
2cups sour cream
Preheat oven to 300 degreese. Grease a Dutch oven and add all ingredients in it. Mix well cover and bake 1 hour. Top with more cheese if desired.
We will be enjoying it with fresh sourdough garlic bread for dinner!

Venison Stew going in the oven and everything we canned!
1 quart canned venison roast
1 quart canned potatoes, green beans and carrots
1 pint corn
Garlic, rosemary
Made a brown gravy from broth. Once gravy was thick popped the Dutch oven in a 325 degree oven for 90 minutes. Pure comfort food.

Came home me from work popped buttermilk biscuits in th oven. Jeff wanted eggs. So he is making him some and I was cold so opened a an of Cajun stew I canned this summer. This is why I can. Easy comfort stew .
Cajun stew
Stew meat and andouille sausage
Assorted veggies( potatoes, tomatoes, corn, bell pepper, onion, celery
Garlic, Cajun seasoning, crushed red pepper and salt.

Dinner in crockpot.Dump N Go Dinner
1 pound smoked sausage
1 onion diced
1 pint carrots with juice
6 cups
1 tablespoon garlic powder
8 peeled and cubed potatoes
1/2 stick butter
3 tablespoons brown sugar

3 tablespoons Worcestershire sauce 2 pkgs. dry onion soup mix
Turn crockpot on low and place all ingredients in crockpot. Stir well before serving. Cook on low 6 hours.

Strawberries are a cookin in the holler this morning. Have 5 turkey roasters going. We started at 3:30 am. Baker and Bear decided it was time to go outside. So we started early. These are freeze dried strawberries. I will let men cook in water and lemon juice for 4 hours. Than we will be making:
Strawberry Pie Filling, Strawberry Jalapeno Jam and Christmas Jam. To be honest I love canning in the fall and winter. It’s cold out , dark and very peaceful here in the holler.

The hollersmells like apples! 2 turkey roasters and crockpot full of apple butter cooking!
Be sure to follow us for great recipes!
Apple Butter
Chop and cored enough apples to fill the roaster.
Add
6 cups sugar
5 cups dark brown sugar
3 tablespoons apple pie spice
3 tablespoons cinnamon
1 tablespoon nutmeg
1/4 cup vanilla
Mix together in roaster. Turn on 250 degrease. Cook 18 hours. Let cook and run through food processor. Cook another hour. Place in sterilized jars. Water bath 25 minutes for pints.

Lazy day in the holler. Didn’t feel like cooking. So it was a pantry casserole. This is why we can.
Ranchero Casserole
1 pint ground beef
1 pint chorizo
1 pint pinto beans
1 onion chopped
1 pint ranchero sauce
Corn tortillas
8 oz shredded cheddar cheese
Preheat oven 350 degrees. Grease a casserole dish and cover with tortillas . Mx meat and onion in a bowl , then spread over tortillas. Speed pinto beans over meat. Place another layer of tortillas and pour ranchero sauce over them. Top with cheese . Cover and bake 45 minutes. Remove from oven and let sit 10 minutes. We topped ours with sour cream, jalapeno and salsa. I didn’t add any seasoning as sauce was spicy when I canned it.

Small batches of our all purpose garlic blend done . All fresh herbs dehydrated and added to our Appalachian Sea Salt.
Just blended 5 pounds for our craft show in West Liberty Ky , November 22.
Here is a simple recipe you can do at home as well.
3 cups sea salt
1 cup roasted garlic
1 cup Italian seasoning
Place in food processor , blend. Store in tightly sealed jar.

Photo is hard to see , we peeled and chopped 14 pounds of garlic this week. Got 20 trays dehydrated. Got up at 3 am ran it through the food processor before work and put it back in for final drying. Pour h smells amazing! I have it screened in with a canning kitchen with a stainless steel table and 4 burner stove. Along with my dehydrators.
I will post a small batch of seasoning salt with recipe tomorrow.

Jeff and I had 14 pounds of local garlic bulbs given to use. First batch cleaned and peeled . 18 trays in dehydrator. Drying them at 110 degrees for 16 hours. Than going to make them in the smoker over hickory wood. Once done they will be going into our new salt blend here at the store.
