Cheesy Taco Cream Cheese Pasta 🌮🧀🍝
This Cheesy Taco Cream Cheese Pasta is the perfect weeknight comfort meal, combining spicy, seasoned beef, creamy cheese, and tender pasta in a rich, flavorful sauce. It's a delicious twist on classic tacos, all in one cheesy, satisfying dish!
Ingredients
For the Pasta:
12 oz pasta (penne, rotini, or shells) 🍝
1 lb ground beef (or ground turkey) 🥩
1 small onion, diced 🧅
2 cloves garlic, minced 🧄
1 packet taco seasoning 🌮 (or homemade blend: 1 tbsp chili powder, 1 tsp cumin, ½ tsp paprika, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp cayenne, salt & pepper)
1 can (10 oz) Rotel tomatoes with green chilies, drained 🍅🌶️
4 oz cream cheese, softened 🧀
½ cup sour cream (or Greek yogurt)
1 cup shredded cheddar cheese 🧀
½ cup shredded Monterey Jack cheese (or more cheddar)
½ cup milk 🥛 (adjust for desired sauce consistency)
Fresh cilantro, for garnish 🌿
Optional Toppings:
Sliced jalapeños 🌶️
Diced avocado 🥑
Crushed tortilla chips for crunch
Extra shredded cheese 🧀
Instructions
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil and cook pasta until al dente, according to package instructions. Drain and set aside.
Step 2: Cook the Beef
In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess grease.
Add onion and garlic, sauté until soft and fragrant, about 2 minutes.
Stir in taco seasoning and Rotel tomatoes. Simmer for 2 minutes.
Step 3: Make the Creamy Sauce
Lower heat and add cream cheese, sour cream, and milk. Stir until smooth and creamy.
Add shredded cheddar and Monterey Jack cheese, stirring until melted.
Step 4: Combine & Serve
Toss in the cooked pasta, stirring to coat everything in the cheesy taco sauce.
Garnish with cilantro and optional toppings.
