2 large egg yolks 🥚 (halal-certified)

1 1/2 teaspoons all-purpose flour 🌾

1/2 cup (113ml) heavy cream 🥛 (halal-certified)

2 tablespoons light brown sugar 🍯

1 teaspoon ground cinnamon 🌿

1/2 teaspoon ground nutmeg 🌿

1/4 teaspoon ground cloves 🌿

3 large Granny Smith apples 🍏 (peeled and cut into 1/8-inch pieces)

For the Brown Sugar Streusel Topping:

1/2 cup (106g) light brown sugar 🍯

1/4 cup (50g) granulated sugar 🍚

1 cup (120g) all-purpose flour 🌾

1/2 cup (62g) old-fashioned oats 🌾

1/2 teaspoon ground cinnamon 🌿

1/2 cup (113g) unsalted butter 🧈 (halal)

For Drizzling:

1 cup (227g) salted caramel sauce 🍮 (make sure it’s alcohol-free or make homemade with halal cream)

Instructions

1. Prepare the Shortbread Crust
Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper. Mix butter and brown sugar until fluffy. Gradually add flour, cinnamon, nutmeg, and salt until crumbly. Press the mixture into the pan and bake for 8 minutes. Cool while you prepare the filling.

2. Prepare the Cheesecake Filling
Beat cream cheese until smooth. Add sour cream, sugar, and vanilla. Mix in eggs and yolks, then flour, cream, brown sugar, and spices. Fold in apples.

3. Assemble
Pour the filling over the cooled shortbread crust.

4. Prepare Streusel
Mix brown sugar, granulated sugar, flour, oats, and cinnamon. Add butter and combine until clumpy. Sprinkle over the filling.

5. Bake
