🥧 Healthy Chicken Pie 🥧
A simple, tasty recipe, free from milk, gluten, and eggs. 🤩
With just four ingredients, prepare this open chicken pie, perfect for any occasion.
📕 Ingredients for the base:
300g cooked chickpeas
4 tablespoons olive oil
3 tablespoons rice flour (add more if the dough is too soft)
Salt to taste
1 pinch of turmeric (optional)

📕 Preparation:
Soak the chickpeas overnight. The next day, drain them and cook them in a pressure cooker for about 20 minutes, until soft.
Once cooled, place the chickpeas in a blender with oil, salt, turmeric, and rice flour. Blend until you get a smooth dough.
Grease an 18cm mold with some oil and press the dough onto the bottom and sides with your fingers.
Bake in a preheated oven at 200°C for about 30 minutes, until the base is firm. (Don’t bake too long to avoid it drying out.)

😋 Filling:
300g chicken breast
1 carrot
Corn
Peas
Onion
Garlic
Salt to taste
Paprika to taste

Filling Preparation:
In a pan, sauté garlic and onion, then add the diced chicken and cook well. Once cooked, shred it.
In another pan, sauté garlic and onion again, then add the chopped carrot, corn, peas, shredded chicken, and spices (salt and paprika).
🔸️ If you like, you can add a bit of tomato sauce.
Turn off the heat and add the cauliflower cream (see below).
Pour the filling onto the baked base and bake again for another 20 minutes.
Let it cool before removing from the mold. Ready!

😄 Cauliflower Cream:
Cook as much cauliflower as you desire in water until tender.
Blend it with some of the cooking water until you get a thick cream.
In a pan, sauté onion and garlic, then add the cream and cook over low heat, stirring until it thickens. Ready! 😉
🔸️ This cauliflower cream is a "fake béchamel." Adjust the amount to your liking, but avoid making it too runny. It has a delicate flavor.

💛 A treat that the whole family can enjoy.
