Peach Cobbler Cheesecake
Peach Cobbler Cheesecake is a rich and elegant dessert that combines the smooth creaminess of cheesecake with the warm, comforting flavor of peach cobbler. It is the perfect choice for special occasions or whenever you want a dessert that looks impressive and tastes unforgettable.
Ingredients
For the crust
2 cups crushed digestive biscuits or graham cracker crumbs
1/2 cup melted butter
2 tablespoons brown sugar
For the cheesecake filling
600 g cream cheese, softened
3/4 cup granulated sugar
3 eggs
1 teaspoon vanilla extract
1/2 cup sour cream or heavy cream
For the peach layer
2 cups sliced peaches, fresh or canned and drained
1/4 cup brown sugar
1 teaspoon ground cinnamon
1 tablespoon cornstarch
1 tablespoon butter
For the cobbler topping
3/4 cup all-purpose flour
1/3 cup light brown sugar
1 teaspoon ground cinnamon
1/4 cup cold butter, cut into small cubes
For garnish
Whipped cream
Peach sauce or caramel sauce
Cherries for decoration if desired
Method
Preheat the oven to 160ยฐC. Mix the biscuit crumbs with melted butter and brown sugar, then press the mixture firmly into the base of a springform pan. Chill in the refrigerator for 10 minutes.
In a bowl, beat the cream cheese with sugar until smooth. Add the eggs one at a time, then mix in the vanilla and sour cream until the filling becomes creamy and well combined. Pour the cheesecake mixture over the chilled crust.
In a small pan, cook the sliced peaches with brown sugar, cinnamon, cornstarch, and butter for 3 to 4 minutes until slightly softened and glossy. Spoon the peach mixture gently over the cheesecake layer.
To make the cobbler topping, combine the flour, brown sugar, and cinnamon, then rub in the cold butter with your fingertips until the texture becomes crumbly. Sprinkle this topping evenly over the peaches.
Bake for 50 to 60 minutes, or until the edges are set and the center is slightly soft. Let it cool completely, then refrigerate for at least 4 hours before slicing and serving.
Serving Tip
Serve chilled with a drizzle of peach or caramel sauce and a small swirl of whipped cream for a beautiful finishing touch.
