Beef and Cheese Chimichangas

๐ Ingredients:
- 1 lb ground beef
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 6 large flour tortillas
- Vegetable oil for frying
- Optional toppings: sour cream, salsa, guacamole

1. In a skillet, cook the ground beef over medium heat until browned. Add the chopped onion, minced garlic, cumin, chili powder, salt, and pepper. Cook until onions are translucent.
2. Remove the skillet from heat and stir in the shredded cheddar cheese until melted.
3. Spoon the beef and cheese mixture onto each flour tortilla, fold the sides in, and roll up tightly to form a chimichanga.
4. In a separate skillet, heat vegetable oil over medium-high heat. Carefully place the chimichangas seam side down and cook until golden brown and crispy on all sides.
5. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
