Santa Suit Christmas Cookies
Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional)
3 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3 cups powdered sugar
2-3 tablespoons meringue powder
4-5 tablespoons water (adjust for consistency)
Red gel food coloring
Red sanding sugar
White sanding sugar
Pink and black nonpareils (for cheeks and eyes)
Small red candies or mini M&Ms (for Santa's nose)
Piping bags with small round piping tips
Directions
1. Make the Sugar Cookies:
Preheat your oven to 350°F (175°C) and line a few baking sheets with parchment paper. In a large bowl, cream together the butter and granulated sugar until the mixture is fluffy and light. Add the egg, vanilla extract, and almond extract if you like, and blend well. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add these dry ingredients into the butter mixture, mixing until just combined. Cover and chill the dough in the fridge for at least an hour so it’s nice and firm.
2. Roll and Cut Out the Cookies:
Once your dough is thoroughly chilled, lightly flour your work surface and roll it out to about 1/4-inch thickness. Use your favorite Santa suit-shaped cookie cutter to cut out cookies. Place them carefully on the prepared baking sheets. Bake for 8-10 minutes, or until the edges are just beginning to turn golden. Set the cookies aside to cool completely before decorating.
3. Prepare Royal Icing:
In a medium bowl, combine the powdered sugar and meringue powder. Add water one tablespoon at a time, beating the mixture until stiff peaks form and you have a smooth, pipeable icing. Divide the icing and tint a portion with red gel food coloring until you get the shade of red you love.
4. Decorate the Cookies:
Fill your piping bags (fitted with a small round tip) with the red and white icing. Outline each cookie with the red icing, then flood the inside to fill. Sprinkle red sanding sugar over the red areas for that extra sparkle. Next, pipe white icing for the suit’s trim and sprinkle with white sanding sugar. Add pink and black nonpareils for Santa’s rosy cheeks and twinkly eyes. Pop a little red candy or mini M&M right in the center for Santa’s nose.
5. Allow cookies to dry completely so the icing sets, then they’re ready to serve or share with loved ones. Enjoy making memories (and cookies) this holiday season!
