Sour Cream and Onion Party Potatoes 🥔

Ingredients:

2 lbs baby potatoes (or small Yukon Gold potatoes)
2 tbsp olive oil
1 packet (1 oz) dry onion soup mix
1 cup sour cream
1 cup shredded cheddar cheese (optional)
1 tbsp fresh parsley, chopped (for garnish)
Salt and pepper, to taste
Instructions:

Preheat oven: Preheat your oven to 400°F (200°C).

Prepare the potatoes: Wash and halve or quarter the baby potatoes, depending on their size. Place them in a large bowl and drizzle with olive oil. Sprinkle with salt and pepper, then toss to coat evenly.

Season the potatoes: Sprinkle the dry onion soup mix over the potatoes, tossing again to ensure even coverage.

Roast the potatoes: Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for 30-35 minutes, or until golden brown and crispy on the outside, and fork-tender on the inside. Stir halfway through for even crisping.
