# # # ๐ค **Slow Cooker Cowboy Casserole** ๐ฅ๐
A hearty, flavorful casserole with layers of potatoes, beef, cheese, and veggies, all cooked to perfection in your slow cooker.
**Ingredients:**
- ๐ฅ 6 medium russet potatoes, peeled and thinly sliced
- ๐ฅฉ 1 lb (450g) ground beef
- ๐ง 1 small onion, diced
- ๐ง 2 cloves garlic, minced
- ๐ฅซ 1 can (10.5 oz/295g) cream of mushroom soup
- ๐
1 can (14.5 oz/411g) diced tomatoes with green chilies (e.g., Rotel)
- ๐ซ 1 cup (240ml) frozen or canned corn, drained
- ๐ง 1 1/2 cups (150g) shredded cheddar cheese
- ๐ง 1 teaspoon smoked paprika
- ๐ฟ 1 teaspoon dried parsley
- ๐ง Salt and pepper, to taste
- ๐ฅ 1/4 cup (60ml) milk
**Directions:**
1. **Cook the Ground Beef:**
- ๐ณ In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned. Add the garlic and cook for 1 minute. Drain any excess grease.
2. **Prepare the Sauce:**
- ๐ฅฃ In a bowl, mix the cream of mushroom soup, diced tomatoes, milk, smoked paprika, parsley, salt, and pepper.
3. **Layer the Ingredients:**
- ๐ฅ Grease the inside of a slow cooker. Layer half of the sliced potatoes on the bottom.
- ๐ Add half of the ground beef mixture, half of the corn, and half of the soup mixture. Repeat the layers, ending with the soup mixture.
4. **Cook:**
- ๐ฅ Cover and cook on **low** for 6โ7 hours or on **high** for 3โ4 hours, or until the potatoes are tender.
5. **Add the Cheese:**
- ๐ง About 20 minutes before serving, sprinkle shredded cheddar cheese over the top. Cover and let the cheese melt.
6. **Serve:**
- ๐ฟ Garnish with fresh parsley if desired. Serve warm and enjoy this cowboy-approved comfort dish!
