Get all those bold, zesty enchilada flavors with zero rolling! Just layer it up in the slow cooker and let it do the work for you while you relax.

**Ingredients**
* 1 lb ground beef
* 1 tbsp olive oil
* 1 small onion, diced
* 2 cloves garlic, minced
* 1 packet taco seasoning (or 2 tbsp homemade)
* 1/2 cup water
* 1 can (15 oz) black beans, drained and rinsed
* 1 can (15 oz) corn, drained
* 1 can (10 oz) red enchilada sauce
* 1 cup salsa
* 6 corn tortillas, cut into strips
* 2 cups shredded Mexican blend cheese
* 1 cup shredded cheddar cheese
* 1/2 cup sour cream
* 1/4 cup chopped fresh cilantro

**Instructions**
1. Heat olive oil in a skillet over medium heat. Sauté the diced onion for 3–4 minutes until soft.
2. Add the garlic and ground beef, cooking until browned. Drain the excess fat.
3. Stir in the taco seasoning and water, simmering for 5 minutes until it thickens up.
4. In your slow cooker, spread a thin layer of enchilada sauce on the bottom.
5. Add a layer of tortilla strips, followed by the beef mixture, black beans, corn, salsa, and a sprinkle of cheese.
6. Repeat these layers until you're out of ingredients, finishing with a thick layer of cheese on top.
7. Cover and cook on Low for 4–6 hours (or High for 2–3 hours) until bubbly.
8. Turn off the heat and let it sit for 5–10 minutes. Top with sour cream and cilantro before serving!

Hearty and wholesome! This all-in-one farmhouse dish is packed with savory meat, potatoes, and veggies. It tastes just like Sunday dinner!

**Ingredients**
* 2 cups cooked chicken or ground beef
* 2 cups potatoes (diced or sliced)
* 1 cup mixed vegetables
* 1 cup cream of mushroom or chicken soup
* 1 cup shredded cheese
* 1 tbsp butter or olive oil
* 1/2 tsp salt

🍎 Cinnamon Roll Apple Lasagna 🍯

Two of the best desserts combined into one epic dish! Imagine layers of soft cinnamon rolls, spiced apples, and gooey caramel. This "lasagna" is a total crowd-pleaser for brunch or dessert!

Ingredients
2 cans refrigerated cinnamon rolls (8-count each)

4 large apples (Granny Smith or Golden Delicious), peeled & diced

½ cup granulated sugar

1 tablespoon cornstarch

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼–⅓ cup caramel sauce

Icing packet (included with cinnamon rolls)

Instructions
Prep the Apples: Preheat your oven to 375°F (190°C). In a bowl, toss the diced apples with sugar, cornstarch, cinnamon, and nutmeg until they are perfectly coated.

Flatten the Rolls: Slice each cinnamon roll into ¼-inch pieces. On a lightly floured surface, gently roll them out until they are nice and flat.

Layer It Up: Line the bottom and sides of a greased baking dish with a layer of flattened rolls. Spread half the apple mixture on top and drizzle with caramel. Add another layer of rolls, the rest of the apples, more caramel, and a final layer of rolls on top.

Bake: Cover with foil and bake for 30 minutes. Remove the foil and bake for another 10–15 minutes until the top is golden brown.

🍑 Peach Cobbler Cheesecake Cones 🍦
Upgrade your dessert game! These handheld treats combine a crunchy white chocolate rim with warm, spiced peaches and a buttery crumble. Perfect for your next get-together!

Ingredients
The Cones:

6–8 waffle cones

1 ½ cups white chocolate chips, melted

1 cup crushed graham crackers

Peach Filling:

4 cups peaches (peeled & sliced)

½ cup granulated sugar

¼ cup brown sugar

1 tsp cinnamon + ¼ tsp nutmeg

2 Tbsp butter

2 tsp cornstarch + 2 Tbsp water (slurry)

1 tsp vanilla extract

Crumble Topping:

½ cup flour

½ cup brown sugar

½ tsp cinnamon

¼ cup cold butter, cubed

Instructions
Prep the Cones: Drizzle melted white chocolate inside each cone. Dip the rims in chocolate, then roll in crushed graham crackers. Let them set upright.

Simmer the Peaches: Cook peaches, sugars, spices, and butter in a pan for 5–7 minutes. Stir in the cornstarch slurry until thickened, then add vanilla.

Bake the Crumble: Mix flour, brown sugar, cinnamon, and cold butter until crumbly. Bake at 350°F (175°C) for 8–10 minutes until golden.

Assemble: Fill the cones with the peach mixture, top with plenty of crumble, and finish with a white chocolate drizzle!

Cheesy Chicken Taco Mac

Ingredients
1 lb of chicken breast cut into cubes
1 tbsp oil
1 onion chopped
1/2 tsp salt and pepper
2 tsp chili powder
1 tsp each of cumin and dried cilantro
1 1/2 cups of chicken broth
2 1/2 cups of elbow macaroni
10 oz can of Rotel not drained
8 oz can tomato sauce
1 tbsp minced garlic
2 cups of shredded Colby Jack cheese
1/2 cup of milk
Fresh cilantro
Instructions
Heat a large skillet over medium-heat. Add 1 tbsp of oil, the chicken, and a chopped onion.
Season with salt, pepper, chili powder, cumin, and dried cilantro.
Once the chicken is pretty much cooked through, add the minced garlic, elbow macaroni, chicken broth, Rotel, and a can of tomato sauce.
Stir everything together well and bring to a quick boil.
Once you see bubbles, turn the heat down to medium low. Cover with a lid and cook for about 12 minutes or until the pasta is cooked. Stir at least once about half way through to keep the pasta from sticking to the skillet.
Finally, add the shredded cheese and milk, stir, and let sit until the cheese is melted. Serve and top with fresh cilantro. Enjoy!

Taco Crock Pot Hashbrown Casserole 🌮🧀

Recipe
Ingredients:

1 lb ground beef (or ground turkey)
1 packet taco seasoning
1 (10 oz) can Rotel (diced tomatoes with green chilies), drained
1 (10.5 oz) can cream of chicken soup
1 cup sour cream
1 (30 oz) bag frozen hashbrowns
1 ½ cups shredded Mexican cheese blend
½ cup diced onion
½ cup milk
1 tsp garlic powder
1 tsp onion powder
½ tsp black pepper
½ tsp chili powder (optional for extra spice)
½ cup crushed tortilla chips (for topping)
Fresh cilantro and diced tomatoes (for garnish)

Directions:

In a skillet over medium heat, cook the ground beef with diced onions until browned. Drain excess grease.
Stir in the taco seasoning and Rotel. Cook for another 2-3 minutes, then remove from heat.
In a large bowl, mix the cream of chicken soup, sour cream, milk, garlic powder, onion powder, black pepper, and chili powder.
Add the frozen hashbrowns, cooked beef mixture, and 1 cup of shredded cheese to the bowl. Stir until well combined.
Spray the inside of your crock pot with cooking spray. Pour the mixture into the crock pot and spread evenly.
Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours.
In the last 10 minutes of cooking, sprinkle the remaining cheese and crushed tortilla chips on top. Cover and let the cheese melt.
Garnish with fresh cilantro and diced tomatoes before serving.

Ingredients

3 cups shredded chicken
1 can enchilada sauce
1 cup sour cream
1 can cream soup
1 cup cheddar
1 cup pepper jack
1 can diced green chiles
1 tsp chili powder
1 tsp cumin
1 package tortillas (cut into pieces)

Instructions

Mix everything except tortillas.
Fold in tortilla pieces.
Spread into baking dish.

Green Chili Chicken Enchiladas

Ingredients
2 cups cooked shredded chicken
1 can (10 oz) green enchilada sauce
1 can (4 oz) diced green chiles
1 cup sour cream
2 cups shredded Mexican blend cheese (or cheddar plus Monterey Jack)
8 flour tortillas (or softened corn tortillas)
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cumin
Salt and pepper to taste
Optional: cilantro, sliced jalapeños

Instructions:
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the shredded chicken, half of the cheese, diced green chiles, garlic powder, onion powder, cumin, salt, and pepper.
Spread 2–3 tablespoons of the green enchilada sauce on the bottom of a baking dish to prevent sticking.
Fill each tortilla with the chicken mixture, roll tightly, and place them seam-side down in the dish.
Whisk the remaining enchilada sauce together with the sour cream, then pour it evenly over the enchiladas.
Sprinkle the rest of the shredded cheese on top.
Bake for 25–30 minutes, or until hot, bubbly, and lightly golden.
Garnish with fresh cilantro or sliced jalapeños before serving, if desired.

1 can red enchilada sauce
1 cup nacho cheese sauce
Optional toppings

Instructions
Cook beef and onion, drain, add seasoning and water, simmer. Warm beans. Spread beans on each tortilla, add beef and cheese, roll tightly. Place in a dish, top with enchilada sauce and nacho cheese. Bake at 350°F for 10–12 minutes. Add toppings and serve.
