🌮 Slow Cooker Beef Enchilada Casserole 🤤🧀
Get all those bold, zesty enchilada flavors with zero rolling! Just layer it up in the slow cooker and let it do the work for you while you relax.
**Ingredients**
* 1 lb ground beef
* 1 tbsp olive oil
* 1 small onion, diced
* 2 cloves garlic, minced
* 1 packet taco seasoning (or 2 tbsp homemade)
* 1/2 cup water
* 1 can (15 oz) black beans, drained and rinsed
* 1 can (15 oz) corn, drained
* 1 can (10 oz) red enchilada sauce
* 1 cup salsa
* 6 corn tortillas, cut into strips
* 2 cups shredded Mexican blend cheese
* 1 cup shredded cheddar cheese
* 1/2 cup sour cream
* 1/4 cup chopped fresh cilantro
**Instructions**
1. Heat olive oil in a skillet over medium heat. Sauté the diced onion for 3–4 minutes until soft.
2. Add the garlic and ground beef, cooking until browned. Drain the excess fat.
3. Stir in the taco seasoning and water, simmering for 5 minutes until it thickens up.
4. In your slow cooker, spread a thin layer of enchilada sauce on the bottom.
5. Add a layer of tortilla strips, followed by the beef mixture, black beans, corn, salsa, and a sprinkle of cheese.
6. Repeat these layers until you're out of ingredients, finishing with a thick layer of cheese on top.
7. Cover and cook on Low for 4–6 hours (or High for 2–3 hours) until bubbly.
8. Turn off the heat and let it sit for 5–10 minutes. Top with sour cream and cilantro before serving!
