* 4–5 potatoes (cut into halves or cubes)
* 3 tbsp olive oil
* ½ cup grated parmesan
* 3 cloves garlic (minced)
* Salt & pepper
* Paprika & oregano (optional)

👩‍🍳 Directions:

1. Preheat oven to 200°C (400°F).
2. In a bowl, mix olive oil, garlic, salt, pepper, and spices.
3. Add potatoes and coat them well.
4. Sprinkle parmesan evenly on a baking tray.
5. Place potatoes cut-side down on top of the cheese.
6. Bake for 35–40 minutes until golden and crispy.

If you’re craving something creamy, cheesy, and unbelievably satisfying… this is IT 😍

🍝 Ingredients:

* 250g spaghetti
* 2 cups marinara sauce
* 250g ground beef (or chicken)
* 1 cup cream cheese
* 1 cup sour cream (or Greek yogurt)
* 2 cups shredded mozzarella
* ½ cup butter
* Salt, pepper, garlic powder

👩‍🍳 Directions:

1. Cook the spaghetti and set aside.
2. Cook the meat, then mix with marinara sauce.
3. In a bowl, mix cream cheese + sour cream until smooth.
4. Layer in a baking dish:
➤ Spaghetti
➤ Cream mixture
➤ Meat sauce
5. Top with mozzarella cheese.

Mini Beef Wellingtons!

Perfect for Your Holiday Gatherings! These bite-sized showstoppers are festive, elegant, and surprisingly easy to make. Great for impressing your guests during the holidays!

Ingredients:

6-8 oz beef tenderloin fillet

3 tbsp butter

2 shallots, minced

8 oz crimini mushrooms (or button mushrooms)

1 tsp fresh thyme (plus extra for garnish)

1/2 tbsp fresh parsley, minced

1/4 cup Cabernet Sauvignon or Sherry wine

1 pastry dough sheet (puff pastry or phyllo)

2 slices prosciutto

1 tbsp Dijon mustard

2 tbsp Gorgonzola cheese (crumbled)

2 tbsp heavy cream

1 tbsp water (for egg wash)

1 egg (for egg wash)

Salt & pepper to taste

Instructions:

Prepare the Mushroom Duxelles:

Pulse mushrooms in a food processor.

Cook minced shallots in butter until soft, then add the mushrooms and fresh thyme. Cook until the liquid evaporates. Deglaze with wine and simmer until dry. Add parsley and season with salt & pepper. Let cool.

Sear the Beef:

Sear the beef fillet in oil on all sides, then slice into 12 even pieces. Season with salt & pepper.

Assemble the Wellingtons:

Roll out the pastry dough and cut into 12 squares.

Layer each square with prosciutto, mushroom duxelles, and a piece of beef. Brush with Dijon mustard.

Roll up the pastry around the beef, sealing the edges.

Bake the Wellingtons:

Brush each Wellington with egg wash and make small slits on top.

Chill for 10 minutes, then bake at 375°F for 12 minutes or until golden brown.

Make Gorgonzola Cream Sauce:

Blend Gorgonzola cheese, heavy cream, and water until smooth.

Serve:

Top each Wellington with a dollop of Gorgonzola sauce and garnish with fresh thyme sprigs.

Creamy Mushroom Soup

Ingredients:
• 3 Tbsp butter
• 1/2 onion, finely chopped
• 2 garlic cloves, minced
• 4 cups mushrooms, sliced (cremini, button, or a mix)
• 1/4 cup all-purpose flour
• 2 cups vegetable broth
• 2 cups heavy cream
• 1 tsp thyme (fresh or dried)
• Salt and black pepper to taste
• Optional: Chopped parsley for garnish

Instructions:
1. In a large pot, melt the butter over medium heat. Sauté the onions and garlic until fragrant, 2–3 minutes.
2. Add sliced mushrooms and thyme. Cook for 6–8 minutes, until mushrooms are browned and tender.
3. Sprinkle in flour and stir for 1 minute to coat the mushrooms.

**6 Ingredients:
• 1 English cucumber
• 1 Lime, fresh zest and juice
• 1 handful Mint, fresh leaves
• 6 cups Watermelon
• 1 Sea salt flakes and fresh ground black pepper
• 6 oz Feta cheese

**Instruction:
1. Prepare Ingredients:

- 1/2 lb cooked sausage, crumbled
- 1/2 cup pepperoni slices
- 1/2 cup bell pepper, chopped
- 1/4 cup red onion, chopped
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp Italian seasoning
- 1 tbsp olive oil
- Salt and pepper, to taste
- Marinara sauce (for dipping, optional)

Directions:
1. Preheat Oven:
- Preheat your oven to 375°F (190°C). Get a baking sheet ready by lining it with parchment paper or lightly greasing it.

2. Prepare the Fillings:

Ingredients:
1 lb large sea scallops, patted dry
Salt and pepper, to taste
2 tbsp olive oil
2 tbsp butter
2 garlic cloves, minced
½ cup white wine (dry, like Sauvignon Blanc)
Juice and zest of 1 lemon
¼ cup fresh parsley, chopped
Lemon slices, for garnish

Directions:
Prepare Scallops: Season scallops with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat.
Sear Scallops: Once the oil is hot, add scallops in a single layer, cooking for 2-3 minutes per side until golden brown. Remove from skillet and set aside.
Make Sauce: In the same skillet, reduce heat to medium. Add butter and minced garlic, sautéing for 1 minute. Pour in wine and lemon juice, scraping up any browned bits from the pan. Simmer for 2-3 minutes until slightly reduced.

Lemon Garlic Roasted Chicken Drumsticks
Ingredients:
6 chicken drumsticks
4 cloves garlic, minced
2 tablespoons olive oil
1 lemon, juiced and zested
1 teaspoon dried oregano
Salt and pepper to taste
Instructions:
