🍫 Gluten-Free Triple Chocolate Layer Cake
Ingredients
For the Chocolate Cake:
- 1 ¾ cups (220g) gluten-free all-purpose flour (with xanthan gum)
- ¾ cup (75g) unsweetened cocoa powder
- 2 cups (400g) granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup (240ml) buttermilk (or almond milk with 1 tbsp vinegar)
- ½ cup (120ml) vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup (240ml) hot water or hot coffee
For the Chocolate Frosting:
- 1 cup (226g) unsalted butter, softened
- ¾ cup (65g) unsweetened cocoa powder
- 4 cups (480g) powdered sugar
- ¼ cup (60ml) milk (plus more if needed)
- 1 tsp vanilla extract
- Pinch of salt
For Topping:
- ½ cup chocolate chips or chunks (for garnish)
Instructions
1. Make the Cake:
- Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add buttermilk, oil, eggs, and vanilla. Mix until combined.
- Slowly add hot water or coffee and mix until smooth. Batter will be thin.
- Pour evenly into prepared pans and bake for 28–32 minutes, or until a toothpick comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
2. Prepare the Frosting:
- Beat butter until creamy.
- Sift in cocoa powder and mix well.
- Gradually add powdered sugar, alternating with milk, until smooth and spreadable.
- Add vanilla and salt, beating until fluffy.
3. Assemble the Cake:
- Place one cake layer on a serving plate. Spread with frosting.
- Repeat with remaining layers.
- Frost the top and sides of the cake evenly.
- Sprinkle with chocolate chips on top and around the base.
