This Boston Cream Pie Cheesecake combines the creamy richness of cheesecake with the classic flavors of a Boston cream pie. A heavenly treat awaits! 🍰✨
Ingredients:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons cornstarch
- 1 cup whole milk
- 1/4 cup granulated sugar
- 2 large egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
Directions:
1. Start by preheating your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well blended, then press the mixture firmly into the bottom of a springform pan to form the crust.
2. In a large mixing bowl, beat the softened cream cheese and 1 cup of sugar together until you achieve a smooth consistency. Add the eggs one by one, mixing thoroughly after each addition. Finally, stir in 1 teaspoon of vanilla extract for that delightful flavor boost.
3. Carefully pour the cream cheese mixture over your prepared crust. Bake in the oven for about 60 minutes. You want the edges to be set while the center should still have a little jiggle to it. Once done, turn off the oven and let the cheesecake cool inside with the door ajar for about an hour.
4. Now let’s make the heavenly custard! In a saucepan, combine 1 cup of milk, 1/4 cup sugar, 2 egg yolks, and 2 tablespoons of cornstarch. Cook this mixture over medium heat, whisking constantly until it thickens. When ready, remove it from heat and stir in 1 teaspoon of vanilla extract.
5. Allow the custard to cool down a bit, then fold in the heavy cream, giving it that luscious texture. Pour this creamy custard over your cooled cheesecake. Now comes the hard part: refrigerate for at least 4 hours, or better yet, overnight!
