Easy Cherry Pistachio Cheesecake Bars πππ°
Crowd-pleasing, creamy, and perfectly sliceable β a festive Christmas tray favorite with crunchy pistachios on top.
Ingredients
Crust
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
Filling
- 16 oz (2 blocks) cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
Topping
- 1 1/2 cups cherry pie filling
- 1/2 cup chopped pistachios
Directions
1. Heat oven to 325Β°F. Line a 9x13-inch pan with parchment (leave overhang for easy lifting).
2. Mix crumbs and melted butter, then press firmly into the pan for a crunchy crust.
3. Beat cream cheese and sugar until smooth, then mix in vanilla.
4. Add eggs one at a time, mixing just until combined each time.
5. Mix in sour cream until smooth and creamy.
6. Pour filling over crust and smooth the top.
7. Dollop cherry filling and gently swirl with a knife for a pretty marbled look.
8. Sprinkle pistachios on top.
9. Bake 40β45 minutes until set (center should jiggle slightly).
10. Cool to room temp, then chill at least 2 hours before slicing into bars.
