Ingredients (Serves 4)

Seafood
• 1 lb large shrimp, peeled and deveined (no tails)
• 1/2 cup premium lump crab meat

The Base
• 4 tbsp unsalted butter, divided
• 1 small onion, finely diced
• 3 garlic cloves, minced
• 10 oz frozen chopped spinach, thawed and squeezed very dry

The Creamy Sauce
• 4 oz cream cheese, softened

Instructions

1️⃣ Preheat & Prep: Heat your oven to 375°F. Pat your shrimp very dry and season with salt, pepper, and paprika.

2️⃣ The Gentle Sear: Place a stainless steel skillet on a gas burner over medium heat. Melt 1 tbsp of butter and sear the shrimp for 45 seconds per side until lightly pink. Remove immediately and set aside.

• ¾ cup shredded mozzarella
• 2 tbsp heavy cream
• 1 tbsp butter, melted (for the filling)
• 2 tbsp butter (for garlic butter topping)
• 3 garlic cloves, finely minced
• 1 tbsp fresh parsley, finely chopped
• ½ tsp salt
• ¼ tsp black pepper

Instructions

1️⃣ Prepare the creamy seafood filling
Place the chopped shrimp, crab meat, cream cheese, mozzarella, heavy cream, melted butter, salt, and black pepper into a bowl.
Stir gently until the mixture becomes thick, smooth, and creamy.
Set aside.

2️⃣ Prepare the salmon
Place the salmon fillets on a cutting board.
Using a sharp knife, cut a horizontal pocket through the center of each fillet, leaving the sides intact so the filling stays inside.

1/3 cup finely grated Parmesan
3 tbsp unsalted butter
3 garlic cloves, very finely minced
1/2 tsp salt

Instructions

1️⃣ Prepare the oven and dish.
Set the oven to 375°F (190°C).

Nothing heavy. Nothing complicated.
This is how I make tuna now.
Save this one.

Ingredients
2 cans tuna in water, drained very well
2 tbsp extra-virgin olive oil
1½ tbsp fresh lemon juice
Zest of ½ lemon
1 tbsp finely chopped parsley
1 tbsp finely chopped dill or chives
2 tbsp finely chopped celery
1 tsp Dijon mustard
¼ tsp salt (or to taste)
¼ tsp black pepper

Optional:
1 tbsp plain Greek yogurt, only if you want it slightly creamier

Instructions
1) Drain the tuna

Drain the tuna very well.
Press gently with a spoon so it stays flaky, not wet.

2) Wake up the base

In a bowl, whisk olive oil, lemon juice, lemon zest, and Dijon until smooth and balanced.

3) Bring it together

Add the tuna to the bowl.
Break it gently with a fork. Do not mash.
Fold in celery, parsley, dill (or chives), salt, and black pepper.

4) Taste and rest

Taste once. Adjust salt or lemon if needed.
Let it rest 5 minutes so the flavors settle naturally.

1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
3 tbsp unsalted butter
1 tbsp olive oil
3 garlic cloves, finely minced
1 tbsp fresh lemon juice
Zest of 1/2 lemon
1 tbsp chopped parsley

Instructions

1) Prep the salmon
