Pulled Pork (Crock pot)

I know everyone likes to make their own tweaks and stuff to recipes but with this one make it just like it is, at least ONCE! You won't regret it wink emoticon

INGREDIENTS

4 lbs pork roast (shoulder or butt)
2 large onions
1 cup ginger ale
1 (18 ounce) bottle favorite barbecue sauce (I like Sweet Baby Ray's)
barbecue sauce, for serving (optional)
DIRECTIONS

Slice one onion and place in crock pot.
Put in the roast and cover with the other onion, sliced. Pour over the ginger ale. Cover and cook on LOW for about 12 hours. See Note 2 below regarding amount of time needed!
Remove the meat, strain and save the onions, discard all liquid. With two forks, shred the meat, discarding any remaining fat, bones or skin. Most of the fat will have melted away.

Return the shredded meat and the onions to the crock pot, stir in the barbecue sauce. Continue to cook for another 4 to 6 hours on LOW.
Serve with hamburger buns or rolls and additional barbecue sauce. Any leftovers freeze very well.

TIP: freeze ready-made sandwiches - a scoop of meat on a bun, well-wrapped. These make a great quick meal or snack. To reheat, remove wrapping, wrap in a paper towel, and zap 1-2 minute in the microwave.

Note: Shoulder or butt are recommended because the meat shreds very well. Other cuts do not shred as readily. It is a fattier cut, but the fat melts away in the cooking and is poured away when you discard the liquid.

Note 2: i: a 6 lb pork shoulder in a 6 qt pot for 8 hours and was shreddable at that point. Shredded, added the sauce, and cooked for another hour or so to meld everything. So use your best judgment on timing!

Note3: You might want to turn your roast over after it's cooked a while, to ensure more even cooking. I think this may depend on the size and shape of your roast and the size of your slow cooker. Remember that each time you remove the lid you lose heat and add additional time, and be careful, as turning a large piece of meat is awkward.

Easter Chick Deviled Eggs

“Adorable 'deviled' chicks peek out of their eggs. Display in an egg cup or egg tray."

Ingredients
12 hard-boiled eggs, peeled
2 tablespoons mayonnaise
1 1/2 tablespoons yellow mustard
1 dill pickle, finely chopped
1 tablespoon prepared horseradish, or to taste
1 teaspoon pickle juice
salt and ground black pepper to taste
1 carrot, cut into rounds
12 slices canned black olives, or as needed

Directions
Slice through the top 1/3 of each egg, ensuring some of the yolk is included in the slice. Carefully remove the egg yolk from the bottom portion of the egg using a spoon and transfer to a bowl.
Mix egg yolks, mayonnaise, mustard, pickle, horseradish, pickle juice, salt, and pepper together in a bowl. Fill a piping bag or a plastic bag with a corner snipped with the egg yolk mixture. Pipe egg yolk mixture into the hollowed egg whites creating the 'chick', ensuring there is enough filling to add 'eyes' and a 'beak.'
Slice small wedges out of the carrot rounds creating 12 'beaks'. Add a 'beak' to each 'chick'.
Slice olive pieces into small squares to be used as 'eyes.' Add 2 'eyes' to each 'chick.' Place the egg tops onto each 'chick' to look like a chick peaking out of the egg.

Cake Mix Cookies~ Super Easy!!

1 Box Chocolate Cake Mix
2 Eggs
1/2 Cup Vegetable Oil
1/2 Package Chocolate Chips

Mix all ingredients until just moistened.
Place on cookie sheet and bake for 10-15 minutes at 350 degrees.
These are so easy and so fast when unexpected company arrives

🇮🇹 Italian Wedding Cookies

Ingredients
• 1 cup unsalted butter, softened
• ½ cup powdered sugar (plus more for rolling)
• 1 tsp vanilla extract
• 1 tsp almond extract
• 2¼ cups all-purpose flour
• ¼ tsp salt
• ¾ cup finely ground almonds (or almond flour)

Instructions
1. Preheat oven to 350°F
2. Cream butter and powdered sugar until light and fluffy
3. Mix in vanilla and almond extracts
4. In a separate bowl, whisk flour and salt
5. Gradually add dry ingredients to butter mixture
6. Fold in ground almonds
7. Roll dough into 1-inch balls
8. Place on ungreased baking sheet (they don’t spread much)
9. Bake 12–15 minutes until bottoms are lightly golden
10. Cool slightly, then roll in powdered sugar
11. Once fully cool, roll again for that thick snowy coating ❄️
