Hot Take: Brown sugar is more important than the chocolate chips🤝

Yep… I said it.

Chocolate chips give you pockets of chocolate.
But brown sugar changes the entire cookie.

🤎 Brown sugar adds moisture
- It contains molasses, which helps cookies stay soft and chewy longer.

🤎 It creates a deeper flavor
- Brown sugar gives cookies that rich, caramel-like taste people associate with bakery cookies.

🤎 It affects the texture
- More brown sugar = softer, thicker, chewier cookies.
- More white sugar = crispier, flatter cookies.

🤎 It helps with color
- Brown sugar creates a darker, more golden cookie.

So if I had to choose between extra chocolate chips or keeping my brown sugar… I’m keeping the brown sugar every time🤷‍♀️

I asked myself that question more times than I can count before I started Even Good Bakery.

But then I asked myself a different question…

What if they do?

What if someone takes a chance on a brand new bakery?

What if they come back for another order?

What if they tell their friends?

What if something I baked becomes part of their family’s traditions?

Then I started receiving messages and comments like this… 🥹🤍

Every review reminds me why I took the leap in the first place!
