Applewood smoked bacon brisket. It's really pork belly, but smoked whole and sliced like a brisket. Lots of brown sugar really brings out the spiciness of the rub.

Hello, everyone! This weekend marks the BBQ and Music Festival at Mile Square Park in Fountain Valley. This will be a fun event for the whole family, but in particular I'm going to be participating in the backyard competition on Sunday, my first time getting my feet wet in competitive BBQ. If you'd like to say hi and show support, I'd be greatly appreciative. I'll also have some chicken thighs cooking on my kettle to share while I have the ribs on the smoker.

Today's smoke were a chuck roast for pulled beef and two full plate racks of short ribs. Smoked on my using white oak from and blue bag charcoal. Got the temps spot on through the whole cook and everything done at the same time for resting in a 170° oven until it was time to slice. Cannot recommend that method enough along with dry brining your meat and placing the meat on your preheated smoker straight from the fridge. Enhances the smoke ring like no other.

These were on the decadent side. Armadillo eggs. Jalapeño popper with a cream cheese mixture that included cheddar and a fair amount of BBQ rub. Encased that in chorizo then finally wrapped the whole thing in two slices of bacon. Finished the cook by basting the nearly finished product in my homemade BBQ sauce. Spicy, cheesy, definitely meaty and so smoky from loading the WSM with the almond and cherry wood I picked up from .
