Instant Pot Beef Stew with Rich Gravy 🥩🍲🥔
This Beef Stew achieves the deep, complex flavor of a dish simmered all day, thanks to the efficiency of the Instant Pot. Cubes of beef chuck are first seared using the sauté function, building a critical layer of flavor. The meat, potatoes, and root vegetables cook quickly under pressure, resulting in incredibly tender beef. The finishing step involves a quick cornstarch slurry, transforming the savory broth into a rich, thick, and satisfying gravy.

Preparation Steps
Prepare the Beef: Pat the beef cubes dry. Season with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Toss beef with the 2 tablespoons of flour (if using) and shake off excess.
Sear the Beef: Set the Instant Pot to the Sauté function. Heat the olive oil. Sear the beef in batches for 3–4 minutes per side until deeply browned. Remove the beef and set aside. Press Cancel.
Prepare the Base and Assemble: Add the chopped onion to the pot and sauté for 3 minutes until softened. Add the minced garlic and cook for 30 seconds.
Deglaze: Pour in the red w**e (if using) or 1 cup of beef broth. Scrape up all the brown bits from the bottom of the pot (deglazing). This is crucial to prevent the "burn" warning.
Assemble and Season: Pour in the remaining broth. Stir in the tomato paste, Worcestershire sauce, dried thyme, bay leaf, and remaining salt and pepper. Add the seared beef back into the pot. Place the potatoes and carrots on top. Do not stir (to prevent the vegetables from sitting on the bottom).
Pressure Cook: Secure the lid and set the steam release valve to the Sealing position. Select the Manual/Pressure Cook function and set the time to 35 minutes at High Pressure.
Release Pressure: When cooking is complete, allow a Natural Pressure Release (NPR) for 10 minutes, then move the valve to Venting for a Quick Release (QR) of any remaining pressure.
Thicken the Gravy: Remove the bay leaf. Set the Instant Pot back to the Sauté function. In a small bowl, whisk together the cornstarch and cold water to create a slurry. Pour the slurry into the hot stew and stir constantly. Cook for 2–3 minutes until the gravy thickens to your desired consistency. Press Cancel.
Serve: Ladle the stew into bowls and garnish generously with fresh chopped parsley.
