Bean & Bacon Soup 😋

Ingredients
1lb navy beans soaked overnight
8oz bacon ( use bacon ends with thick pieces of ham)
1 cup minced onion
1 cup diced celery
1 cup diced carrot
2 minced garlic cloves
1 small bay leaf
3 sprigs fresh thyme
6 cups chicken stock
2 tbs Knorrs Natural chicken bouillon

Directions
Cut bacon in bit size pieces and cook till crisp, drain and reserve 2 tbs fat
Add veggies to pot and cook 3-5min
Add garlic and herbs
Add broth bacon and Knorrs to the pot.
Cook 1 1/2-2hrs on med covered. Can use a potato masher to smash some beans and make it thicker.

Asparagus Stuffed Chicken Breast

Ingredients:
4 Skinless boneless chicken breasts about 1 1/2 lb.
1 Tsp Italian seasoning mix
1 Tsp Garlic Powder
1 Tsp Smoked Paprika
Sea salt and pepper
12 Asparagus stalks end trimmed
1 oz, Tomatoes chopped up
4 slices Mozzarella Cheese
1 Tbsp Olive Oil

Instructions:
Preheat your oven to 400 F. Place the chicken on a clean chopping board and sprinkle with Italian seasoning, garlic powder, paprika, salt, pepper.

Start cutting each one lengthwise to create the pockets. Be careful not to cut all the way through.

Add 3 sprigs of asparagus and a couple of pieces of tomatoes to a mozzarella slice, then roll it to hold them inside. Stuff the chicken breasts with it.

Close the pocket with a toothpick. Heat oil in skillet. Add in the chicken and sear it until nicely golden brown, about 3-5 minutes per side. Bake the chicken for 15-20 minutes.

Arizona Sunshine Lemon Pie 🍋

Ingredients:
For the pie:
1 large lemon
4 large eggs
½ cup butter, melted
1 teaspoon vanilla
1½ cups sugar
1 (9 inch) piecrust, unbaked (I used a frozen deep dish)
For the topping: (optional)
1 cup whipping cream
2 Tablespoons sugar

Directions:
Take your pie crust out of the freezer or make your own. I used a frozen deep dish pie crust and it worked perfect. I placed it on a cookie sheet because the metal pan was not that strong but if using a glass pie plate you won’t need to do this.

Preheat your oven to 350 degrees.

Wash your lemon then cut up and remove all the seeds. (Don’t peel it, you will blend the whole lemon!) Place in your high powdered blender (such as a Vitamix).

Add the eggs, butter, vanilla and sugar. Blend till smooth. I started at power 5 then moved up to 10. Pour the mixture into your pie crust. Bake for about 40 minutes or until set. Let cool then chill in the fridge.

For the topping:
Place your mixing bowl and beaters in the freezer for about 20 minutes. Add your whipping cream and sugar. Whip till peaks form.
Slice pie and serve chilled with a dollop of the whip cream on top.

BANANA CREAM PUDDING SHOTS

INGREDIENTS:
- 1 PACKAGE (3.4 OZ) INSTANT BANANA CREAM PUDDING MIX
- 1 CUP COLD WHOLE MILK
- 1/2 CUP VANILLA VODKA
- 1/2 CUP COCONUT RUM
- 1 CUP WHIPPED TOPPING, THAWED
- 1/2 CUP CRUSHED VANILLA WAFERS
- 1 BANANA, SLICED

DIRECTIONS:
1. IN A LARGE BOWL, WHISK TOGETHER THE COLD MILK AND BANANA CREAM PUDDING MIX UNTIL SMOOTH.
2. GENTLY FOLD IN THE WHIPPED TOPPING UNTIL FULLY COMBINED, BEING CAREFUL NOT TO DEFLATE THE MIXTURE.
3. STIR IN THE VANILLA VODKA AND COCONUT RUM, MIXING UNTIL THE LIQUIDS ARE FULLY INCORPORATED.
4. DIVIDE THE MIXTURE EVENLY AMONG 8 SMALL SHOT GLASSES, FILLING EACH ABOUT THREE-QUARTERS FULL.
5. CHILL THE SHOTS IN THE REFRIGERATOR FOR AT LEAST ONE HOUR TO SET.
6. BEFORE SERVING, GARNISH EACH SHOT WITH A SLICE OF BANANA AND A SPRINKLE OF CRUSHED VANILLA WAFERS.

BRUNCH PUNCH 🍊🍋

1 (12-ounce) can frozen orange juice concentrate, thawed
1 (12-ounce) can frozen lemonade concentrate, thawed
3 cups pineapple juice
2 cups peach nectar
1 (1-liter) bottle ginger ale or champagne
5 cups ice cubes
Orange, lemon, and pineapple slices for garnish

In a large punch bowl, combine orange juice and lemonade concentrates, and pineapple juice and peach nectar; stir until well combined.
Cover and chill until ready to serve then stir in ginger ale and ice cubes, float fruit slices on top, and serve immediately.
Notes
If you prefer an alcoholic version of this punch, substitute 1 (750-ml) bottle of champagne for the ginger ale.

Shrimp and Crabmeat Étouffée

Ingredients
2 onions, chopped
2 stalks celery, chopped
1 teaspoon olive oil
1/4 teaspoon Granulated Garlic
2 1/2 cup chicken broth
1/4 cup flour
3 tablespoons lemon juice
1/8 teaspoon Cayenne Pepper, or to taste
2 teaspoons Tabasco sauce
1 1/2 lb shrimp, peeled and deveined
1 1/2 lb lump crabmeat
1/4 cup green onions, chopped
1/4 cup fresh parsley or 1 1/2 tablespoon Dried Parsley
3 cups cooked rice

Directions
In a large stockpot, sauté onions and celery in olive oil until softened, about 10 minutes, stir in garlic granules. Combine chicken broth and flour and stir until smooth. Add to celery mixture and bring to a boil. Reduce heat and simmer until thickened, about 30 minutes. Add lemon juice, cayenne and Tabasco sauce. Add shrimp and cook about 5 minutes.
Add crabmeat, green onions and parsley and cook for an additional 5 minutes.

2 (10 ounce) packages frozen corn kernels, thawed
1cup heavy cream
1 teaspoon salt
2 tablespoons granulated sugar
1/4 teaspoon freshly ground black pepper
2 tablespoons Butter
1 cup Whole Milk
2 tablespoons all purpose flour
1/4 Cup freshly grated Parmesan Cheese

In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat, and stir in the Parmesan cheese until melted.

Chicken and Broccoli Lasagna

Ingredients:
2 cups cooked, shredded chicken
2 cups broccoli florets, chopped
1 jar (24 oz) marinara sauce
1 1/2 cups ricotta cheese
1 1/2 cups shredded mozzarella cheese
9 no-boil lasagna noodles (or you can precook regular noodles)
Salt and pepper, to taste

Instructions:
Preheat the oven to 375°F. Lightly grease a 9x13-inch baking dish and set aside.

In a large mixing bowl, combine the shredded chicken, chopped broccoli, and half of the marinara sauce. Mix well, and then season with salt and pepper to taste.

Spread a thin layer of the remaining marinara sauce onto the bottom of the prepared baking dish. Place three no-boil lasagna noodles on top of the sauce.

Spread 1/3 of the chicken and broccoli mixture evenly over the lasagna noodles. Top with 1/3 of the ricotta cheese, spreading it out in dollops. Sprinkle 1/3 of the shredded mozzarella cheese over the ricotta layer.

Repeat the layering process with the lasagna noodles, chicken and broccoli mixture, ricotta cheese, and mozzarella cheese two more times, ending with a layer of mozzarella cheese on top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15 minutes.

BBQ Green Beans! 🍽️

Ingredients
12 oz. pkg. frozen "steamable" green beans
5 slices bacon, chopped
1/4 C. chopped onions
1/4 C. brown sugar
1/2 C. ketchup
1 T. worcestershire sauce

Directions
Steam the green beans according to pkg. directions. In a skillet, add the bacon and cook till it begins to get crisp, add in the onion and cook for 2-3 minutes, drain off the bacon grease. To the pan, add the brown sugar, ketchup, worcestershire sauce, vinegar and mustard.

Stir to combine well. Reduce the heat to low and add the green beans to the pan, stirring to coat in the sauce. Cook for 5 minutes, season with the pepper before serving.
