Honey-Glazed Salmon with Garlic Butter Potatoes & Cheesy Asparagus 🍯🐟🥔🧀
Ingredients:
For the Salmon:
2 salmon fillets
2 tbsp honey
1 tbsp soy sauce
1 tbsp olive oil
1 clove garlic, minced
Juice of ½ lemon
Salt and pepper to taste
For the Potatoes:
1 lb baby potatoes
2 tbsp butter
1 tbsp olive oil
2 cloves garlic, minced
1 tbsp chopped parsley
Salt and pepper to taste
For the Asparagus:
1 bunch fresh asparagus
1 tbsp olive oil
Salt and pepper to taste
½ cup shredded mozzarella or Swiss cheese
Instructions
1. Prepare the Potatoes
Boil the potatoes for 10–12 minutes until fork-tender. Drain. In a skillet, melt butter with olive oil and garlic. Add potatoes and sauté until golden and crispy. Toss with parsley, salt, and pepper.
2. Make the Glazed Salmon
In a bowl, mix honey, soy sauce, olive oil, garlic, lemon juice, salt, and pepper. Brush the salmon with this mixture.
Pan-sear or grill over medium heat for 4–5 minutes per side, basting with glaze until caramelized and flaky.
3. Cook the Asparagus
Toss asparagus in olive oil, salt, and pepper. Roast or sauté for 5–7 minutes until tender. Sprinkle cheese on top and let it melt.
4. Assemble and Serve
Plate the cheesy asparagus, garlic butter potatoes, and glazed salmon together. Drizzle extra glaze over the salmon for shine and flavor.
