Ingredients:

Instructions:
1. Preheat oven to 425ยฐF.
2. Toss tomatoes, roasted peppers, zucchini, onion, sliced garlic, olive oil, parsley, and pepper together in a bowl.
3. Spread mixture onto a roasting pan or sheet pan and roast 30โ35 minutes until vegetables soften and caramelize.
4. Heat roasted mixture in a large skillet over medium heat. Add chopped garlic, chiles, cumin, and basil.
5. Simmer 5 minutes until sauce thickens slightly.
6. Make four wells in the vegetable mixture.
7. Add 1 whole egg to one well and distribute the egg whites among the remaining wells.
8. Cover and cook 5โ7 minutes until egg whites are set.
9. Remove from heat and sprinkle with feta cheese.
10. Garnish with parsley and serve warm.
