Chicken & Dumpling
For the soup:

1 stick butter
1 small onion, diced
2–3 celery stalks, sliced
2 carrots, peeled & sliced
3–4 cups cooked shredded chicken
6 cups chicken broth
1 cup milk or heavy cream (optional for creamier soup)
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
Salt & pepper to taste

For the dumplings:

1 can refrigerated biscuit dough (8 biscuits)

Instructions

1. Build the base
In a large pot, melt butter over medium heat. Add onion, celery, and carrots. Cook for about 5–7 minutes until softened and fragrant.

2. Add broth & chicken
Pour in the chicken broth and stir in shredded chicken. Add garlic powder, onion powder, thyme, parsley, salt, and pepper. Bring to a gentle boil.

3. Make it creamy
Stir in milk or cream for a richer, comforting texture.

4. Add dumplings
Cut each biscuit into 4 pieces. Drop them one at a time into the simmering soup (don’t overcrowd or stir too much right away).

5. Simmer
Reduce heat to low, cover, and let simmer for 12–15 minutes. The dumplings will puff up and cook through.

6. Finish
Give a gentle stir, taste, and adjust seasoning if needed.

Greek Pasta Salad

4 lbs pasta (rotini or penne work best)
* 4–5 lbs cooked chicken breast (grilled or shredded, bite-sized)

Veggies + Mix-ins

* 4 cups cherry tomatoes, halved
* 3 large cucumbers, diced
* 2 large red onions, thinly sliced
* 2–3 cups Kalamata olives, pitted & halved
* 3 cups feta cheese, crumbled
* 2 cups bell peppers (red/yellow), diced
* 1 cup fresh parsley, chopped

Greek Dressing (Homemade = best flavor!)

* 2 ½ cups olive oil
* 1 cup red wine vinegar
* ¼ cup lemon juice (fresh!)
* 4–5 cloves garlic, minced
* 2 tbsp dried oregano
* 1 tbsp Dijon mustard
* 1 tsp salt (adjust to taste)
* 1 tsp black pepper



👩‍🍳 Instructions

1. Cook pasta
* Boil in salted water until al dente
* Drain and rinse with cold water (keeps it from getting mushy)
2. Prep chicken
* Grill with olive oil, salt, pepper, oregano
* Slice or cube into bite-size pieces
3. Chop everything
* Prep all veggies and add to a very large bowl (or split into 2 bowls)
4. Make dressing
* Whisk all dressing ingredients together until emulsified
5. Assemble
* Add pasta + chicken to veggies
* Pour dressing over and toss well
6. Add feta last
* Gently fold in feta so it doesn’t break down too much
7. Chill
* Refrigerate at least 2–4 hours (overnight is even better!)
