Citrus, Garlic & Chili marinated Castelvetrano Olives!!

To a small saucepan I added all of the Marinade ingredients first.

2 cups Castelvetrano olives pitted & drained

(Marinade):

1/3 cup EVOO
2 splashes of Red wine vinegar
1 tsp. Chili flakes
4-5 large garlic cloves sliced
Zest of one Minneola plus juice of
Sprig of fresh Thyme & Rosemary each
Heavy pinch of sea salt
Glug of maple syrup

Add all ingredients EXCEPT olives to a small saucepan bring to a rolling SIMMER for 3-5 minutes. Remove from heat, add olives, toss well to combine.

Serve warm or place in fridge overnight and serve chilled.
Either way is delicious!

You can sub citrus component with: orange, tangerine or lemon.

So delicious!
