I made a very simple veggie pasta for dinner tonight, it was perfect for a cold rainy day. Plus I needed to use up some veggies that were going to go bad!
Chop up any veggies you want or have I used mushrooms bell pepper zucchini spinach and a drained can of diced tomatoes
Heat up some olive oil and start with a bunch of minced garlic then toss in your veggies. Season with crushed red pepper, black pepper, parsley. In another pot cook whatever pasta you want to use until almost done. When the veggies are about half way done toss in your tomato’s and spinach. Once spinach is cooked down stirring it all together pour in 1/3 or so cup of white wine and allow to evaporate. When pasta is about 1-2 from being done to your liking transfer it to your veggies saving the pasta water. Toss it all together and add 1/2-1 ish ladle of pasta water. Allow to cook until pasta is done to your liking.
Top with cheese if you prefer, lord knows I added my parm!
