Thanks to a delicious gift of select fish from Alaskan Seafood Company by Grant's daughte, we found a recipe for Cod Confit with fennel. We wanted to make the recipe but I definitely did not want to use so much oil. After some online research, I decided to sous vide them confit style! Each bag had less than a cup of oil, not to drown in EVOO, but enough to flavor!

A simple sear for color and voila! Dinner was served... and delicious!

With freshly picked broccoli stir fried in truffle oil and garlic, our meal was complete!

Lunch anyone? I was browsing the web when I came to this not-so-new diet. We all have had desires to lose weight, right? Well... I might have just found a new one to try!

Miracle Toddler Diet

Losing weight is the number one New Year's Resolution. The problem is, hardly anything works. Well, I found this one diet that will absolutely shed the pounds. Read it and see if you don't agree, it works for my two-year-old.

Miracle Toddler Diet! Guaranteed Results!

People are always on the lookout for a new diet. The trouble with most diets is that you don't get enough to eat (the starvation diet), you don't get enough variation (the liquid diet) or you go broke (the all-meat diet). Consequently, people tend to cheat on their diets, or quit after 3 days.

Well, now there's the new Toddler Miracle Diet. Over the years you may have noticed that most two-year-olds are trim. Now the formula to their success is available to all in this new diet. You may want to consult your doctor before embarking on this diet, otherwise, you may be seeing him afterwards. Good Luck !

DAY ONE:

Breakfast: One scrambled egg, one piece of toast with grape jelly.
- Eat 2 bites of egg, using your fingers; dump the rest on the floor.

- Take 1 bite of toast, then smear the jelly over your face and clothes.

Lunch: Four crayons (any color), a handful of potato chips, and a glass of milk (3 sips only, then spill the rest).

Dinner: A dry stick, two pennies and a nickel, 4 sips of flat Sprite.

Bedtime snack: Throw a piece of toast on the kitchen floor.

DAY TWO:

Breakfast: Pick up stale toast from kitchen floor and eat it.

Drink half bottle of vanilla extract or one vial of vegetable dye.

Lunch: Half tube of "Pulsating Pink" lipstick and a handful of Purina Dog Chow (any flavor). One ice cube, if desired.

Afternoon snack: Lick an all-day sucker until sticky, take outside, drop in dirt. Retrieve and continue slurping until it is clean again.
Then bring inside and drop on rug.

Dinner: A rock or an uncooked bean, which should be thrust up your left nostril. Pour Grape Kool-Aid over mashed potatoes; eat with spoon.

DAY THREE:

Breakfast: Two pancakes with plenty of syrup, eat one with fingers, rub in hair. Glass of milk; drink half, stuff other pancake in glass.

After breakfast, pick up yesterdays sucker from rug, lick off fuzz, put it on the cushion of best chair.

Lunch: Three matches, peanut butter and jelly sandwich.

- Spit several bites onto the floor.
- Pour glass of milk on table and slurp up.

Dinner: Dish of ice cream, handful of potato chips, some red punch. Try to laugh some punch through your nose, if possible.

FINAL DAY:

Breakfast: A quarter tube of toothpaste (any flavor), bit of soap, an olive. Pour a glass of milk over bowl of cornflakes, add half a cup of sugar. Once cereal is soggy, drink milk and feed cereal to dog.
Lunch: Eat bread crumbs off kitchen floor and dining room carpet. Find that sucker and finish eating it.

Dinner: A glass of spaghetti and chocolate milk. Leave meatball on plate. Stick of mascara for dessert.

When you are not feeling well or you just don't know what to eat, what is your go to dish you want to make or eat? (Easy recipe at end of post!)

Growing up, whenever one of the kids were sick, mom would make arroz caldo, a filipino chicken and rice porridge. It was always so good, especially when it had lot sa of finger to soothe the sore throat. As we grew up, my siblings and I followed that tradition, cooking that when our own kids were sick or in the doldrums. I learned to make it even more flavorful that it could be served not just during sick times but during gatherings and sometimes potlucks!

Yesterday morning, Grant shared with me one of his family's comfort food... Cracker Eggs! Very simple and definitely warming to the soul, especially when made with love. After he made his version, we looked to see if there were recipes for it online. It is amazing how many versions of Cracker Eggs there are! He believes his dad, who was born in 1916, created it but he does not know the real history of the recipe. The hardest part of the recipe is mastering soft boiled eggs.

Cracker Eggs
3 minute (soft boiled) eggs
Saltine crackers
Butter (only if yolks are too dry)

Prepare the soft boiled eggs either on the stove or pressure cooker. While it is cooking, prepare an ice water bath to immediately stop the cooking process. Place eggs in ice water.

Carefully remove the eggshell and scoop the soft boiled egg into a bowl. Grab a handful of crackers and crumble them into the bowl. If the yolk is too dry, add enough slivers of butter shavings to moisten the mixture. The egg should be warm enough to melt the butter. Season with pepper if desired.

Colorado Springs is a beautiful place to visit! Although we only had an afternoon, it was a beautiful and blessed day! We saw not only mule deer and wild turkeys, but also a lone pronghorn antelope and a herd of female and young bighorn sheep! Sad I was too slow to take a photo of the antelope but had the opportunity to watch him slowly move out of our driving path.

These past few weeks have been amazing! My boyfriend and I decided to take a four week roadtrip. To enjoy the trip, we decided to do some food prep to cook while on the road and eat out only once a day! It is amazing how we have been able to use those savings for more fun stuff like sight seeing and staying in some nice hotels once in a while!

Our first day on the road atarted with our cat Mugs watching us as we finish packing for the road. Mugs thoughts... Will they or will they not take me on the road?

Poor Mugs gets car sick so he and his sis stay home with friends caring for them while we are gone.

Then off we go! I do love the varying landscapes! Our first day we had carnitas wrapped in tortillas, cooked in our new cooker which runs using the 12 volt adapter!

Brilliantly done... Only a librarian could have done this! Or a very voracious reader!

Simply Creative and Delicious

As a busy full-time mom, I had discovered that although I loved cooking, I found it a challenge to ensure my kids had healthy but tasty meals within minutes. I might not have always succeeded but I discovered that sometimes, being creative with basic and fresh ingredients was more successful (aka kid friendly) than the elaborate and time-consuming recipes. I discovered that although having the right ingredients (most of the time) is important, the tools in the kitchen can not only make cooking and baking easier to master and achieve, but also encourages our little ones to help out in the kitchen.

And when I discovered Pampered Chef over 20 years ago, I had fun trying out new kitchen ‘toys’. To this day, I still have products from several parties I attended and hosted! I would not be able to live without the garlic press, the batter bowl, the stoneware (and the awesome brown pan scrapers!) to name a few, but now I have discovered the air fryer and the Quick Cooker!

Becoming an Independent Pampered Chef consultant was an easy choice to make, especially now that I have adult children. I am now able to explore and share more of my passion. And with teen nephews and a pre-teen niece, I have been able to share my love for cooking and baking all over again!

I look forward to partying with you, sharing recipes, tips and tricks to help master the little things in the kitchen.
