Fresh cut fries using the pampered chef rapid prep mandolin

Hi everyone, just wanted to share a quick summer recipe with you all.

I plan on making this for a quick and easy salad for when we are camping.

Refrigerator cucumber salad

4 cucumbers sliced thin
1 large red onion sliced thin
1 large green bell pepper sliced thin
1 TBSP kosher salt
2 cups white vinegar
1 1/2 cups sugar
1 tsp celery flakes
1 tsp dried red pepper flakes
2-3 Qrt Mason jars

1. I used my rapid prep mandalin to slice my onions and cucumbers.
Mix cucumbers,onion, bell pepper and salt in large bowl.

2. Place remaining ingredients into a pot. Bring to a boil. Remove from the heat and add 1 1/2 cups of ice. Wait until ice has melted.

3. Layer cucumbers, onions,and pepper in the jars. Depending on how big your product is you may need 3 jars.

4. Pour the vinegar mixture into each jar, up to about a inch from the top. Seal and Refrigerate up to 2 months.
