Lola’s Spices Southwest Roasted Triple Tail. 🐟✨
Ingredients:
- 1 lb. Triple Tail
- 1/2 TB Lola’s Spices Southwest Blend
- 1 tsp Olive Oil
- 1 cup Cherry Tomatoes, halved or thirds
- 3 Green Onions, thinly sliced
- 1 tsp Cilantro, chopped
- 4 TB Unsalted Butter, melted
- 1/2 TB Lola’s Spices Southwest Blend
- 1 tsp Finely Chopped Cilantro
Instructions:
1. Preheat the oven to 400 F. Roast tomatoes with olive oil for 6-8 mins.
2. Season Triple Tail with Lola’s Spices Southwest blend.
3. Prepare the spiced butter mixture by melting butter, adding Lola’s Spices Southwest blend, and chopped cilantro.
4. Nestle seasoned fish into the roasted tomato mixture, spoon spiced butter on top, and sprinkle with green onions.
5. Bake for an additional 6-8 mins or until the fish reaches 145 F.

Serving Suggestion: Lola’s Spices Southwest Lentils
1 TB Lola’s Spices Southwest blend
1 Cup Lentils
1/2 Cup Onion *chopped
1/4 Cup Sweet Bell Peppers *chopped
3 Cups Water
1 Tsp Cilantro *freshly chopped
1 pinch salt *to taste
In a pot over medium heat, add Olive oil, Onions, Bell peppers, and saute for 3 mins or until soft. Add lentils, water, cilantro and stir. Bring mixture to a boil and reduce heat to simmer and cover, keep lid slightly ajar and continue to cook for 20 mins or until lentils are done to your desired tenderness.
