Vegan Pumpkin and Lentil Parmentier
This Vegan Pumpkin and Lentil Parmentier is a cozy, plant-based twist on the traditional French dish. Layers of hearty lentils, vegetables, and creamy mashed pumpkin make it both comforting and satisfying.
Ingredients:
For the Lentil Filling:
1 cup dried green or brown lentils, rinsed 🥣
1 tablespoon olive oil 🫒
1 onion, diced 🧅
2 carrots, diced 🥕
2 celery stalks, diced 🥒
2 cloves garlic, minced 🧄
1 teaspoon fresh thyme 🌿
1 teaspoon smoked paprika 🌶️
1 teaspoon salt 🧂
½ teaspoon black pepper 🧂
1 can (14 oz) diced tomatoes 🍅
1½ cups vegetable broth 🍲
For the Pumpkin Mash:
3 cups pumpkin or butternut squash, cubed 🎃
2 tablespoons olive oil or vegan butter 🧈
Salt and pepper, to taste 🧂
Pinch of nutmeg (optional) 🌰
For Topping:
Fresh parsley, chopped 🌿
Instructions:
1. Prepare the Lentil Filling:
Cook the Lentils: In a medium saucepan, cook the lentils in water for 15-20 minutes or until tender. Drain and set aside.
Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add onion, carrots, and celery, and cook for 5-7 minutes until softened. Add garlic, thyme, smoked paprika, salt, and black pepper, cooking for another 2 minutes.
Add Tomatoes and Broth: Stir in diced tomatoes and vegetable broth. Let the mixture simmer for 10-15 minutes, allowing the flavors to blend and the sauce to thicken slightly.
Combine with Lentils: Stir in the cooked lentils, adjust seasoning, and let the filling simmer for an additional 5 minutes. Set aside.
2. Make the Pumpkin Mash:
Cook Pumpkin: In a large pot, steam or boil the cubed pumpkin for 10-15 minutes until tender.
Mash Pumpkin: Drain and mash the pumpkin with olive oil or vegan butter, salt, pepper, and a pinch of nutmeg if desired.
3. Assemble the Parmentier:
Layer the Filling: Spread the lentil filling evenly in a greased 9x13-inch baking dish.
Top with Pumpkin Mash: Spread the pumpkin mash over the lentil mixture, smoothing it out with a spoon.
4. Bake:
Bake: Preheat oven to 375°F (190°C). Bake for 20-25 minutes until the top is golden and slightly crisp.
5. Serve:
Garnish and Serve: Sprinkle with fresh parsley and serve warm.
