โœ…Chicken Ricotta Meatballs in Spinach Alfredo Sauce

For the Meatballs:
1 lb ground chicken
1/2 cup ricotta cheese
1/4 cup grated Parmesan
1 egg
1/2 cup breadcrumbs
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
For the Spinach Alfredo Sauce:
2 tablespoons butter
1 clove garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach, chopped
Salt and pepper to taste
Additional:
Cooked pasta, for serving
Fresh parsley, for garnis
For the Meatballs: In a large bowl, mix together ground chicken, ricotta, Parmesan, egg, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper until well combined. Form into 1-inch meatballs.
Place meatballs on a baking sheet lined with parchment paper and bake at 400ยฐF for 20-25 minutes, or until cooked through.
For the Sauce: While meatballs are baking, melt butter in a saucepan over medium heat. Add garlic and sautรฉ for 1 minute. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth. Add chopped spinach and cook until wilted. Season with salt and pepper to taste.
Add cooked meatballs to the sauce and stir to coat.
Serve meatballs and sauce over cooked pasta, garnished with fresh parsley.

Ingredients:
2 large ripe bananas
4 large eggs
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract (optional)
Cooking spray or oil for greasing the pan
Instructions:
Prepare the Batter:
Peel the bananas and place them in a mixing bowl. Mash them well with a fork until smooth.
Add the eggs, baking powder, and vanilla extract (if using) to the mashed bananas. Mix well until all ingredients are fully combined.
Heat the Pan:
Heat a non-stick skillet or griddle over medium heat. You can lightly grease the pan with cooking spray or a small amount of oil if desired.
Cook the Pancakes:
Once the pan is hot, pour about 1/4 cup of the batter onto the skillet for each pancake. You can adjust the size based on your preference.

INGREDIENTS:
YIELD: 12 cannoncini
For the custard cream (crema pastiera):
3 egg yolks
3 tablespoons (30 gr) of all-purpose flour
1/2 cup (100 gr) of sugar
1 teaspoon of vanilla extract
8 oz (235 ml) of milk
For the cannoncini:
1 sheet of puff pastry, defrosted (about 8 oz, 225 gr)
1/4 cup (50 gr) of sugar
1 egg (for egg wash)
powdered sugar to decorate
PREPARATION:
Start by preparing the custard cream (crema pastiera):
Warm up the milk until hot (not boiling).
In a medium-sized pan, whisk the egg yolks with the sugar, vanilla extract, and flour, until light and fluffy.
Add the milk some at a time while whisking, making sure there are no lumps

SlOW COOKER CROCKPOT CHICKEN AND POTATOES ๐Ÿ˜‹๐Ÿฏ
INGREDIENTS:
1. Bone-In, Skin-On Chicken Thighs: I tested this recipe with different types of chicken and found that bone-in, skin-onchicken thighs worked best.
2. The bone helps to keep the chicken moist as it cooks low and slow in the crockpot.
3. If you prefer, you can remove the skin from the chicken before cooking but I did not find this to be necessary.
4. Onion and Garlic: Flavor! Youโ€™ll sautรฉ the onion and garlic on the stove to soften their flavor.
Thyme, Rosemary and Bay Leaves: This is my favorite combination of herbs in this recipe, but you can try other seasonings if you prefer. I use dried herbs because I always have them on hand, but you can substitute fresh. If using fresh, you can just throw a few whole sprigs of thyme and rosemary in the slow cooker and remove the stems after cooking.
Tomato Paste: The tomato paste adds richness and depth of flavor. If you donโ€™t have any on hand, you can omit it.
All Purpose Flour: The flour is needed as a thickener for the gravy.
Chicken Broth: I recommend using low sodium chicken broth so that you can better control the amount of salt in your meal.
Carrots: Youโ€™ll want to cut the carrots up fairly small โ€“ I recommend 1/2-inch half moons. This way, the carrots will be sure to cook in the same amount of time as the chicken. You can also use whole baby carrots, if you want to skip a chopping step.
Potatoes: Any type of baby potatoes will work well in this recipe. If the baby potatoes are small (about 3/4-inch wide), you donโ€™t even have to chop them. If theyโ€™re bigger, halving the potatoes will ensure that they cook until tender.

Texas toast sloppy
Ingredients:
1lb lean ground beef25 cup chopped onion
ยฝ tsp garlic powder
3/4 cup ketchup
2 tsp tomato paste
ยฝ tsp Worcestershire sauce
2.5 tsp brown sugar
Salt & Pepper โ€“ to taste
4 pieces of Green Mill Texas Toast
1oz shredded cheddar cheese
Instructions:
Start preheating oven at 375 for your Texas Toast
On stovetop, medium heat, brown your ground beef, and onion. Drain once browned.
Add in ketchup, tomato paste, Worcestershire sauce, brown sugar, and salt and pepper. Stir well to combine all ingredients.
Cook over medium heat until mixture has thickened to your liking
While thickening the sauce place Green Mill Texas Toast into preheated oven.
Bake toast 5-6 minutes until golden brown.
Place your Sloppy Joe Mixture on top of your golden-brown Texas Toast
Top with ยผ oz of Cheddar Cheese on each piece of toast.

Southern Coconut Cake
Ingredients:
Coconut cake โ€“ Southern style coconut cake
375 g. of โ€œcake flourโ€ flour (mixture of flour & cornstarch)
6 egg whites
2 egg yolks
120 g. powdered sugar
100 g. half-salted butter
140 g. coconut cream
200 g. coconut milk (or 340g. of coconut milk in total, without coconut cream)
1 sachet of baking powder
2 tbsp. coconut extract
60 g. creme fraiche
30 g. powdered sugar
3 gelatin sheets (or 1.5 g of agar agar)
Coconut frosting โ€“ coconut frosting
50 g. butter
50 g. cream cheese (like Philadelphia or St Moret)
65 g. coconut cream (or 85g of coconut milk + 10g of cream cheese)
80 g. icing sugar
3 tbsp. coconut extract
1 C. 1 teaspoon liquid vanilla extract
140 g. grated coconut (+ 115 g. for decoration)
Instructions:
Coconut cake โ€“ Southern style coconut cakeIn a salad bowl, pour the flour.
Take out 30 g.
then replace with 30 g.
cornflour and mix well.Then, sift the flour, baking powder and salt together, 3 times in total (use two salad bowls to transfer from one to the other).
In a bowl, mix the coconut cream, the coconut milk, the egg yolks, and the crรจme fraรฎche together.
In another salad bowl, or the bowl of your food processor (using the leaf accessory), cream the butter and 2/3 of the sugar (80 g.) For 4 minutes at medium speed. & add the coconut extract.
On low-speed, adding dry & liquiid ingredients alternately. Start with flour (baking powder & salt), then cream (coconut milk & crรจme fraรฎche), then flour and so on โ€“ ending with flour. In total, the flour should be poured in 4 times, and the cream in 3 times.
Once the whole is homogeneous, stop the robot.Add the baking soda, then the white vinegar to one place. It will foam up, so quickly restarts the robot for full incorporation, but not for long. The mixture should not last more than 15-20 seconds
Preheat the oven to 175 ยฐ C.
In another bowl, whip the egg whites. As soon as they turn white and slightly foamy, incorporate the last third of the remaining sugar, as you go. Stop beating when the eggs hold together and form a birdโ€™s beak when they come out of the whisk.
Gently fold in the egg whites using a spatula.Bake for 25-30 minutes at 175 ยฐ C if you use 3 molds 20cm in diameter or for 1H15 โ€“ 1H30 if you use a single mold of 20cm in diameter.
Let cool completely before assembly.

30-Minute Rolls
Ingredients:
1 cup plus 2 tablespoons warm water
โ…“ cup oil
2 tablespoons active dry yeast
ยผ cup sugar
ยฝ teaspoon salt
1 egg
3ยฝ cups flour (either bread flour or all-purpose will work)
Instructions:
Preheat oven to 400 degrees.
In the bowl of your stand mixer, combine the warm water, oil,
yeast, and sugar. Allow the mixture to rest for 15 minutes.
Mix 2 cups of the flour, the salt, and the egg into the yeast mixture
using a dough hook. Add the remaining 1ยฝ cups flour ยฝ cup at a
time.
Shape dough into 12 balls and place in a 9ร—13 pan. Let dough rest
for 10 minutes.
Bake for 10 minutes or until tops are just golden brown .

Pumpkin Roll Cake
Ingredients:
3 eggs
1 cup sugar
2โ„3 cup pumpkin
1 teaspoon lemon juice
3โ„4 cup flour
2 teaspoons cinnamon
1 teaspoon baking powder
1 teaspoon ginger
1โ„2 teaspoon nutmeg
1โ„2 teaspoon salt
1 cup chopped walnuts
powdered sugar
1 (8 ounce) package cream cheese
4 tablespoons butter
1 cup powdered sugar
1โ„2 teaspoon vanilla
DIRECTIONS:
Preheat oven 375ยบF.
Grease and waxed paper-line 15x10-inch jelly roll pan; set aside.
In large mixing bowl, beat eggs at high speed for 5 minutes. Gradually add sugar. Reduce speed to medium; add pumpkin and lemon juice. Stir dry ingredients together and fold into pumpkin mixture. Spread evenly into prepared pan. Sprinkle with nuts on top. Bake 15 to 16 minutes, or until cake is firm in center. Remove from oven. Cool 5 minutes. Cut around edge of pan. Place clean dish towel liberally coated with powdered sugar on large flat surface. Turn cake with nuts side down onto towel. Remove waxed paper. From 10-inch side, quickly roll cake up in towel. Cover with another clean dish towel. Set aside to cool completely.
To make filling: In mixing bowl beat together cream cheese and butter; stir in powdered sugar and vanilla and blend until smooth. Unroll cake. Evenly spread filling over cake. Roll up cake (without the towel!). Wrap in plastic wrap. Cover and chill at least 1 hour. Slice before serving. Store in refrigerator.

Ingredients
For the Cake:
1 cup (2 sticks) unsalted butter, room temperature
11/2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1/2 teaspoon coconut extract
1 cup all-purpose flour
11/2 cups cake flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup crushed pineapple, drained
1/4 cup coconut milk
1/4 cup rum (optional, for extra flavor)
For the Glaze:
1 cup powdered sugar
2-3 tablespoons pineapple juice
1 tablespoon coconut milk
1 tablespoon rum (optional)
Directions
Preparing the Cake:
Preheat Oven:
Preheat your oven to 325ยฐF (165ยฐC). Grease and flour a
10-inch bundt pan or tube pan.
Cream Butter and Sugar:
In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
Add Eggs and Extracts:
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla and coconut extracts.
Combine Dry Ingredients:
In a separate bowl, whisk together the all-purpose flour, cake flour, baking powder, baking soda, and salt.
Mix Dry Ingredients and Wet Ingredients:
Gradually add the dry ingredients to the butter mixture, alternating with the coconut milk, beginning and ending with the flour mixture. Mix until just combined.
Add Pineapple and Rum:
Gently fold in the crushed pineapple and rum, if using.
Pour and Bake:
Pour the batter into the prepared pan and smooth the top. Bake for 60-70 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Cool:
Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.

Mix Glaze Ingredients:
In a small bowl, whisk together the powdered sugar, pineapple juice, coconut milk, and rum, if using, until smooth.

Easy pork chops
Ingredients:
2 pork chops, boneless 1โ€ณ thick
2 tablespoons brown sugar
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
ยฝ teaspoon onion powder
1 tbs butter
1 cup chicken broth
ยฝ tablespoon Worcestershire sauce
1 teaspoon Liquid Smoke
Instructions:
Mix spices and brown sugar and rub into both sides of pork chops. Refrigerate for at least 15 minutes and up to 24 hours.
In a cast iron or heavy-bottomed pan, heat 1 tbsp oil over medium high heat. Place the chops in the pan and cook for 5 minutes.
Flip the chops, reduce heat to medium and cook for an additional 8-10 minutes. Internal temp should reach 140 degrees, remove from pan and enjoy!

Caramel Pecan Cheesecake

Ingredients
1 cup graham cracker crumbs

ยฝ cup ground pecans

3 tablespoons white sugar

ยฝ teaspoon ground cinnamon

ยฝ teaspoon apple pie spice or to taste

ยฝ teaspoon ground nutmeg or to taste

ยผ cup butter, melted

2 (8 ounce) packages cream cheese, softened

ยฝ cup white sugar

ยฝ teaspoon vanilla extract

2 large eggs

ยผ cup caramel ice cream topping

1 cup chopped pecans

Directions
Preheat the oven to 350 degrees F (175 degrees C). Combine graham cracker crumbs, ground pecans, sugar, cinnamon, apple pie spice and nutmeg in a medium bowl. Pour in melted butter; mix well and press into the bottom of a 9-inch springform pan.

Beat cream cheese, 1/2 cup sugar, and vanilla in a large bowl until smooth. Beat in eggs, one at a time, until blended. Pour filling on top of prepared crust.

Bake in the preheated oven until edges are puffed and surface of cheesecake is firm except for a small spot in the center that will jiggle when the pan is gently shaken, about 70 minutes. Allow cheesecake to cool.

Combine caramel topping and chopped pecans in a small bowl; spread evenly over cooled cheesecake. Refrigerate at least 4 hours before serving.

SOFT BUTTER BREAD ๐Ÿ˜‹
Ingredients:
500 gr of wheat flour
300 grams of butter
200 grams of sugar
30 gr of baking powder
5 eggs
50ml milk
1 tbsp salt
Preparation:
1. Beat warm water with sugar and dry yeast. Set aside for the yeast to activate.
2. Beat the flour with salt and add the yeast solution.
3. Knead the dough with your hands until it is smooth and elastic.
4. Add the butter and knead for 10 minutes. Set aside to rise for 2 hours.
5. After two hours, or once it has doubled in size, the dough can be pierced.
6. Cut the dough into 6 pieces.
7. Flatten each piece with a rolling pin, then roll it up.
8. Place rolled pieces in cake pan and set aside for 1 hour or until doubled.
9. Bake for 20-25 minutes at 180ยฐC/350ยฐF. Brush with melted butter
