Street Corn Chicken Casserole 🌽🍗🔥
A bold and creamy twist on Mexican street corn—this chicken casserole is layered with cheesy, zesty goodness and just the right amount of spice. Easy to make, ultra satisfying, and perfect for weeknight dinners or potluck wins! 💛🌶️
Ingredients:
2 cups cooked, shredded chicken
1 (15 oz) can corn, drained (or 2 cups fresh/frozen)
½ cup sour cream
4 oz cream cheese, softened
½ cup mayonnaise
1½ cups shredded cheddar cheese
½ tsp chili powder
½ tsp smoked paprika
1 tsp garlic powder
Salt & pepper to taste
½ cup crumbled Cotija or feta cheese
2 tbsp chopped cilantro
Juice of 1 lime
Optional: diced jalapeños for extra heat
Directions:
1. Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
2. In a large bowl, mix cream cheese, sour cream, mayo, garlic powder, chili powder, paprika, lime juice, salt, and pepper until smooth.
3. Stir in chicken, corn, shredded cheddar, and half of the Cotija. Mix until fully combined.
4. Pour mixture into the baking dish and spread evenly. Top with remaining Cotija and a little extra cheddar if desired.
5. Bake for 20–25 minutes or until hot and bubbly.
6. Garnish with cilantro and serve with tortilla chips, rice, or as a filling for tacos!
