🥦 Amish-Style Broccoli Chicken Patties (Cast-Iron Skillet)

Ingredients:
• 2 cups cooked chicken, finely chopped or shredded
• 1 cup fresh broccoli, very finely chopped (lightly steamed & drained well)
• 2 large farm-fresh eggs
• 1 cup shredded cheddar cheese
• ½ cup breadcrumbs (or crushed buttery crackers)
• ½ tsp garlic powder
• ½ tsp onion powder
• Salt & black pepper to taste
• 2–3 tablespoons butter or lard (for skillet)



Instructions:
1. Prepare the broccoli
Steam lightly until just tender. Drain very well and pat dry — too much moisture will make patties fall apart.
2. Mix the filling
In a large bowl, combine chicken, broccoli, eggs, cheese, breadcrumbs, and seasonings. Stir until fully combined. The mixture should be thick enough to shape.
(If too wet, add a little more breadcrumbs.)
3. Form patties
Shape into palm-sized patties about ½ inch thick.
4. Heat the cast iron skillet
Melt butter or lard over medium heat until hot but not smoking.
5. Cook
Place patties in skillet. Cook 4–5 minutes per side until golden brown and crispy on the outside, and heated through.
6. Rest & Serve
Let rest a few minutes before serving. These pair beautifully with fresh garden tomatoes or mashed potatoes.

🧺 Amish Cinnamon Puff Rolls

Light, fluffy rolls coated in butter and cinnamon sugar — baked until golden and heavenly.

🥣 Ingredients

For the Dough:
• 3 cups all-purpose flour
• 2 ¼ teaspoons active dry yeast (1 packet)
• 1 cup warm milk
• ¼ cup sugar
• ¼ cup melted butter
• 1 large egg
• ½ teaspoon salt

For the Coating:
• ½ cup melted butter
• 1 cup sugar
• 2 tablespoons cinnamon



👩‍🍳 Instructions

1️⃣ Prepare the Dough
1. In a bowl, dissolve yeast in warm milk with a pinch of sugar. Let sit 5–10 minutes until foamy.
2. Add sugar, melted butter, egg, and salt.
3. Gradually mix in flour until soft dough forms.
4. Knead 5–7 minutes until smooth.
5. Cover and let rise in a warm place for about 1 hour (until doubled).



2️⃣ Shape & Coat
1. Preheat oven to 350°F.
2. Punch down dough and form small 2-inch balls.
3. Dip each ball into melted butter.
4. Roll in cinnamon-sugar mixture.
5. Place in a greased baking dish or cast iron skillet.



3️⃣ Bake
• Bake 20–25 minutes until golden brown and puffed.

Optional: Drizzle lightly with simple glaze (powdered sugar + milk + vanilla).

🥣 Ingredients
• 1 cup butter (softened)
• 1 cup brown sugar (packed)
• ½ cup white sugar
• 2 large eggs
• 2 teaspoons vanilla extract
• 2 ½ cups all-purpose flour
• 1 teaspoon baking soda
• ½ teaspoon salt
• 2 cups semi-sweet chocolate chips



👩‍🍳 Instructions
1. Preheat oven to 350°F.
2. In a large bowl, cream together butter, brown sugar, and white sugar until light and fluffy.
3. Beat in eggs one at a time, then stir in vanilla.
4. In a separate bowl, mix flour, baking soda, and salt.
5. Gradually add dry ingredients to wet mixture.
6. Fold in chocolate chips.
7. Drop rounded spoonfuls onto a greased baking sheet.
8. Bake 9–11 minutes until edges are golden brown.
