Burmese Pork Belly Curry & Eggplant 🍆🥓
Cooking Time: 1 hour
Ingredients
• 300 g pork belly (cut into small pieces)
• 1 long eggplant (cut into slices)
• 1 small onion (chopped)
• 4–5 cloves garlic (minced)
• 1–2 tablespoons chili powder
• 1 teaspoon turmeric powder
• 1 tablespoon oil
• 1 cup water
• A pinch of salt
• A pinch of MSG (optional)
• A pinch of chicken flavor broth mix (optional)
• 1 tablespoon fresh cilantro (chopped)
Steps
1. Chop the onion, garlic, and eggplant.
2. Heat oil in a pan on medium heat.
3. Add onion and garlic. Cook until fragrant.
4. Add pork belly and cook for about 5 minutes.
5. Add chili powder and turmeric powder. Mix well.
6. Add eggplant and stir together.
7. Pour in 1 cup water. Cover and cook for about 45 minutes until the pork and eggplant are soft.
8. Add salt, MSG, and chicken flavor broth mix.
9. Stir and cook for another 10–15 minutes.
10. Sprinkle fresh cilantro on top and serve hot with rice.
