My husband and I celebrated our 1st Wedding Anniversary earlier this week so I thought I’d share my super quick and easy Chicken Alfredo recipe that I made for us!

Ingredients:
-1 lb cavatappi or pasta of your choice
-1 lb chicken breast, grilled & cut into strips. (I used the fully cooked chicken strips for salads)
-Approx. 12 oz Parmesan Cheese, freshly grated works best because the starch in pre shredded makes it not melt easily.
-1 cup heavy cream or milk, I prefer heavy cream for a thick, creamy Alfredo sauce.
-2 tbsp flour
-3 tbsp butter
-Spices: I use a little Italian seasoning, garlic, black pepper, and a tiny bit of crushed red pepper. I add spices to look and taste, so if I had to guess, probably about a tbsp of the Italian and garlic, 1/2 tbsp black pepper, and a tsp red pepper?

Instructions:
1. While boiling the pasta, add the flour and 2 tbsp of the butter to a medium sauce pan over medium-low heat, stirring until well combined (it’ll make a sort of paste. This is your roux. Side note: this is also the starting point for making gravy)
2. Slowly add heavy cream while constantly stirring. (I like to add mine about an oz at a time to make sure it’s fully incorporated and it doesn’t break the bond between the butter and flour. If that happens you’ll have runny sauce)
3. Add Spices
4. Slowly add cheese, stirring constantly. Don’t add it all at once or it won’t melt easily.
5. Once sauce is done, turn heat to low or warm and stir occasionally until pasta and chicken is done.
6. Add chicken breast strips into a medium frying pan with remaining butter and a little black pepper and garlic, fry until golden brown. Be sure to cook to at least 165 degrees if using raw chicken
7. Strain pasta
8. Add pasta, chicken, and sauce to your plate & enjoy!

* The garlic bread was just hamburger buns with butter, garlic and a little cheese toasted in the oven.

So unfortunately, I had some family stuff come up and never got around to finishing my sauce. Lost all those tomatoes in the process and have to get more and start again. 😭 Gonna pickle some peppers instead until I can get back to Janoskis.

Sorry I’ve been silent on this page! It’s gardening season and I’ve also been super busy with family things the last few months!

Anyway, I’m back and ready to kick off harvest season with some food preservation! My Roma tomatoes didn’t produce much this year (but I have an abundance of Sun Gold and Sweet 100 Cherry tomatoes… make it make sense!) So I had hubby go to Janoskis after work today and grab me these beauties!

I heard that if you freeze them for 24 hours, the peels are easy to remove without having to blanch them. So I’m gonna try that and be back with y’all tomorrow or Tuesday to update you on the process. (The reason I don’t want to blanch them is that I’m going to dehydrate the peels and use them for tomato powder and spices. I’m worried that blanching will affect the flavor in the peel)

Anyway, by my calculations I should be able to make about 8 quarts of sauce for under $30! (We’ll see how much I actually get. I’m making plain sauce, meat sauce, and pizza sauce) -$24 for 25 lbs of Roma tomatoes, $4 for green bell peppers (I paid $2 per 4 plants and I’m going to use 8 plants worth of in this sauce. Each plant produced 4-6 peppers just under the size of a baseball), about $.85 worth of onion powder (I buy it in bulk cause I’m allergic to the gas in onions so I can only cook with powdered or dehydrated), basil and oregano were free cause I grew them from previous years seeds, and about $1.50 for fresh garlic cause my plant died lol. Oh! Add $4 for one lb fresh ground beef from the meat market for my 2 quarts of meat sauce! So with that considered, it’s going to be $34.35 total! Not half bad!

8 quarts is equal to 10.66 24 oz. Jars of Ragu (about $2.50-$3 per jar) so this isn’t going to save a bunch of money, but it allows us to eat pasta that we know is completely non-gmo with no chemical preservatives for the same price and minimal excess effort. Also helping us not have to rely on the stores for a staple like pasta sauce. And for my family, that’s priceless!

(Long, kinda deep post alert!)

When you lose a loved one, it’s the little things that send you spiraling… one tiny little post it note found while finally cleaning off my desk and organizing my Pink Zebra office took me back in time one of the worst days of my life…

I finished teaching a class for my main job and called the facility to see if my mom needed me to get anything on my way to visit only to be informed she was rushed to the hospital SEVEN HOURS AGO and nobody called me! What’s written on this post it note was all the nurse on the phone knew.

I wish I knew then that written on this post it are the symptoms of my beloved mama’s final weeks. Everyone thinks I’m crazy, but I wish I did more for her. But more than anything, I wish I could call her to talk about how I felt when I found it. Like really talk to her.

I say all that to say this: I know she’s so proud of me. Self care sometimes requires you to sit in your feelings for a minute. You can’t release what you don’t allow yourself to feel. She would be so happy I’m not just shoving it down and keeping busy. And don’t get me wrong, if I was working a scheduled job or something today, I would’ve had to for a little while. But the point is I’m learning to feel and heal and you should too if you haven’t! Sometimes we all need a good cry. Don’t forget to make the time. šŸ’•

Growing up sucks! We get addicted to the hustle and grind of just being able to try to afford a better life and we lose touch with friends, family, our hobbies, and just the little pieces that make us, well us.

Self-care is needed even more once you pass 30, as I’ve learned over the last few years. Sometimes that’s as simple as pulling up messenger and reaching out to an old friend, drawing a bubble bath, creating something, or listening to the new Taylor Swift album on repeat and allowing yourself to just sit in your feelings for a moment. Whatever it is that brings your peace or that feeling of sunshine in your soul, do it!

My dogs have always been big fans of Rachel Ray Noutrish as a food topper but for the past few months, it’s been harder and harder to afford and sometimes we can’t even find it.

I’ve always wanted to feed my dogs the best food I could and with so many differing opinions, recommendations, and recalls that’s tough! So I took it upon myself to research ingredients and start cooking for them myself! This is a little over a weeks supply of Chicken Stew food topper for my pack. I have 2 big boys and 3 little girls.

It’s super easy to make! About 3 cups of shredded rotisserie chicken, a can of green beans, a can of carrots, a cup of chicken stock, and 2 tbsp of flour to thicken the gravy.

I started by dumping the veggies into my pan without straining the liquid off. Then I added the chicken stock and flour, stirred and let it simmer on medium heat for about 5 minutes until gravy thickened, added the chicken, simmered for about 15 more minutes then let cool.

Chicken is only good in the fridge for about 4 days max, so I divided it and froze half since I have about 8-9 days worth here.

Did you know some chicken ā€œtrashā€, a stock pot, and about 5 hours of idle time, 30 minutes of actual work can save you at least $10-$15?

Seriously! How many of you buy a rotisserie chicken, and throw away the bones and fat when all the tender deliciousness is gone? I know I always threw the bones out. And it was stupid cause I knew I could make stock from it, but I didn’t know it was so EASY!

I just threw the bones, leftover skin, and all the gelatinous stuff in my stock pot, added 2 tbsp of parsley, 3 tbsp onion powder, and 1 tbsp Italian seasoning (I’ll probably use bay leaves in the future cause that’s what my grandma did but I didn’t have any so i improvised with Italian), and added water until it was about 2 inches above the bones. Brought the pot to a rolling boil and let it boil down for about an hour, then reduced heat and let simmer for another hour covered with the lid askew to allow steam to escape. Then let it cool down, strain and store. I ended up with 3.5 liters of stock. Then I repeated the same process with the same chicken ā€œtrashā€ and got another liter of light chicken broth for the dog’s food!

When I make noodles, I go through at least 3 32oz bottles of chicken stock! I got enough here to make a pot of noodles and still have some left over! For free and very little effort!

If you’re local to Weirton WV/ Burgettstown PA and can’t or don’t want to make your own stock, bring me your chicken bones and containers and I’ll make it for you, no problem! Throw me a few bucks for my time and spices and you’ll still save money! I can do veggie stock too if you save your veggie scraps in the freezer when you cook. They’re good frozen for 3 months!

(If you make your own staples, you can save enough money to splurge on snacks! That’s my philosophy lol)
