🇹🇭 I would like to introduce one of the great Thai BBQ styles. It’s called..🐷🔥Call Moo Yang (Grilled Pork Shoulder).🔥🔥

This dish uses pork shoulder marinated in simple ingredients like fresh garlic, white pepper, fish sauce, and a pinch of sugar. Then it’s grilled slowly over low heat. Don’t forget to serve it with Nam Jim Jeaw (Gao Sauce) on the side!

This dish comes from the Northeast of Thailand. You can often find it at a papaya salad shop (Som Tum shop). If you’re in Thailand, give it a try!

If you’re cooking at home, here’s the recipe:

Ingredients:

🐖 Pork shoulders – 4 lbs

🧄 Fresh garlic – 1 head

⚪ White pepper – 1/2 teaspoon

🐟 Fish sauce – 1/4 cup

🍬 Sugar – 2 teaspoons

For pork shoulder BBQ, you should pick the cut that has some fat for a more tender and juicy texture."

How to make it:

1. 🧄 Smash the garlic and mix it with white pepper in a mortar (or just chop and mix).

2. 🥣 In a large bowl, combine garlic mix with fish sauce and sugar.

3. 🐷 Add pork shoulder and massage the marinade into the meat. Let it sit for at least 1 hour, or overnight for best flavor.

4. 🔥 Grill over low heat until the outside is nicely browned and the inside is juicy (flip as needed).

5. ✂️ Let it rest for a few minutes, then slice and serve with Nam Jim Jeaw (แจ่ว) and sticky rice.
