Arroz Doce 🍚 🍋 🇵🇹

Um pouco de doçura em um domingo 🫶🏼

3 cups medium grain rice
6 cups of water
2 lemon peels
1 stick of cinnamon
2 teaspoons of butter
6 3/4 cups of milk
1 3/4 cups of sugar
3 egg yolks
Salt
Powdered cinnamon

✨ Bring 6 cups of water to a boil for the pinch of salt. When is brought to boil address theory cups of medium grain rice. Let that cook until all water is dissolved. Once it’s dissolved. Add in your 6 3/4 cups of milk, 2 lemon peels, stick of cinnamon also your 1 teaspoon of butter. Give it one good star and let it come to a simmer. Once it starts getting thick scramble up your three egg yolks in a separate bowl add a little of the warm milk to it while you scramble them so when you pour it into the boiling milk, they won’t scramble after you pour in the egg yolks also put your sugar. Put it on medium heat for about 68 minutes while everything gets thickened up and comes together remove the lemon peels & the cinnamon stick.
Pour into a dish an garnish with cinnamon 🤌🏼 ✨

Ervilhas com Chourico 💣 🔥
My kitchen is my favorite place.

RECIPE ‼️

-one pack of chicken tenderloins.
-one white onion.
-2 sticks of chourico.
-one bag of frozen peas (one pound)
-one tiny can of tomato paste.
-one bay leaf.
-1/4 olive oil.
-one tablespoon of minced garlic.
-1/4 cup of white wine.
-salt & pepper to taste.
-4 eggs.

* in a medium sauce pan heat the oil & put the chicken and the chourico in the pan. Cook it until the chourico is browned and the chicken is cooked. Next you add your chopped up onion let that cook off until it’s translucent. once that is all set, you can add your tiny can of tomato paste and mix well. After that you add your 1/4 cup of wine, 3 cups of water enough to cover all the stuff in the pan & your tablespoon of minced garlic. Next is the frozen peas. let it simmer until the frozen peas are cooked. also add your bay leaf. Simmer for a few minutes. Let all the flavors mix together. Add salt and pepper for taste. Measure with your heart. Next is the eggs. Create a little hole in 4 spots of the pan. Crack an egg in each. Cover until the egg is cooked!

H E L L O 🤍 I just realized I’ve never introduced myself to all my supporters 🤞🏼I have a lot of followers on here that know me & a lot of new ones that don’t, so here goes . . . 🤩 Let me introduce myself as the girl behind all the good cookin’ 💣‼️

•My name is Corbin, I’m 32 years old & a mama to 3 amazing kids. I have a daughter & 2 sons. My hands are always full, but my hearts even fuller.

•I’m from a small town, Swansea, Ma born & raised.

• I am blessed with an amazing man by my side. His name is Alex & I couldn’t ever walk this crazy journey we call life without him. He’s my biggest supporter in all I do. Their is never a day he isn’t cheering me on from the sidelines. He is an awesome father & man. We have been together almost 10 years & he has given me the happiest years of my life.

•My original dream was to be a hairdresser. Kids got thrown into the mix & I wasn’t able to reach that goal, but I found my heart in cooking.

•Growing up I always watched my Vavo cook. She has inspired me in many ways, but cooking with her was and still is one of my favorite things to do. My heart is in a kitchen. Weather it’s hearty food or a delicious dessert, count me in!

•For years I’ve always tried to find something that put me at peace. I never knew what it was that I needed. I went through a lot of trauma in my life. I’ve always suffered from really bad panic & anxiety attacks. I still have my good days & bad days, but cooking makes me seem to forget about all the worry. I don’t just do this for me I do this for all of you! With all your support it has inspired me to go even bigger than just my kitchen. (Stay tuned) I enjoy making videos & posting all my recipes for each one of you to also enjoy! Whatever comes out of my kitchen is made with more love than you could imagine.

•When they told me shoot for the stars, I understood the assignment 🙏🏼🤞🏼✨

🌟 Canja 🌟with vegetables 🥕 (chicken rice soup)

-1 large container of chicken broth
-celery stalks (cut up)
-3 cans of carrots
-chicken tenderloins (cut up)
-garlic powder
-onion powder
-salt
-pepper
-4 chicken bullion cubes
-2 cups of instant white rice
-parsly for garnish

Chilly weather ✅ A big pan of soup ✅ full belly’s ✅

Now there is no where in the “book” that says you wont have a smile while having a bowl of Portuguese soup. There are many different ways to make it. This is my way & I haven’t come across one person that didn’t say it was BOMB 💣

⭐️CALDO VERDE ⭐️

-2 bags of curly kale. 🥬
-family size container chicken broth.
-2 cans of pea soup. 🫛
-1 container of ground Chourico.
-1 large pack of boneless chicken thighs.
-4 cans of diced potatoes 🥔
-wet red crushed pepper 🌶️
-garlic powder
-onion powder
-6 chicken bullion cubes
-one pack of stew meat
-water

⭐️ grab your BIGGEST panela (soup pan)
Pour in the chicken broth.
Fill the rest of the panela up with water
Pour in your 2 cans of pea soup
Drop in your ground Chourico
Drop in your chicken thighs
Cut up the stew meat into smaller pieces, then also add them.

Let the meat cook, when it’s done take your chicken thighs out and shred them with a fork. Bring the chicken back to the panela. Now add your two bags of curly kale. Season with your heart! ❤️ onion powder, garlic powder & red crushed pepper. ( a little red crushed goes a long way) 🌶️
Add the chicken bullion cubes.
Let it all cook & come together.
When it’s just about to be done add the 4 cans of diced potatoes, you want to add them last because while everything is cooking they will stick to the bottom of the panela & burn. By this time, your kale should be soft, your house should smell like Vavo was cheffing up the BEST pan of soupish for a Sunday dinner.

Don’t forget some Papo secos ( Portuguese bread) 🥖

This is the perfect dish for a slow chilly Sunday afternoon 🍷⛅️

HEY..HAPPY SATURDAY 🐟

Who doesn’t love a nice piece of baked stuffed scrod? I mean everyone does right? 🤩

💥BAKED STUFFED SCROD HAS JOINED THE CHAT

-4 fillets, fresh not frozen. (one for the bottom and one for the top).
-Seafood stuffing. ( it can be purchased or you can make your own.
-Butter. (Coat the top of the fish
-Parsley for garnish 🤌🏼
-Lemon (a little slice on top for a razzle dazzle) 🤗

Sefood stuffing, Corb’s way (portuguese) 🥳…
-Bread 4 cups ( you can use the dry bread cubes in the bag)
-3 tbsp olive oil
-3 cups tbsp of butter
-One small onion, chopped very small
-3 fresh cloves of garlic, minced
-I use the crab meat and scallops mix (it comes frozen in a bag) easiest way. Chop very small
-1/2 cup white wine (like Vinho Verde or dry white)
-1/2 tsp smoked paprika (Portuguese pimentão if you have it)
-1/2 tbsp red crushed pepper flakes (if you like a little kick) 😉
-1 cup chicken broth (adjust to your preference)
-salt & pepper to taste .. season with your heart ❤️

*pop it in the oven at 350 degrees. 45 minutes give or take ..ENJOY 😘
