I try to regularly stick around to allow people to taste the beverage before buying. I also answer questions about the health benefits and the fermentation process. One may think that since this awesome probiotic drink is made with sugar water that it is too high in sugars to be a safe daily choice of beverage. But it is a safe choice. The sugars are up to 85% consumed by the fermentation process that releases the probiotics, prebiotics, antioxidants, and other nutrients that are very important for your gut biome. It is a great alternative to all those other high sugar juices or fake energy drinks.
If on the first taste you feel it is too sweet, leave it on the counter for 6-12 hrs for further fermentation and consumption of the sugars. I prefer it with longer fermentations! And although Kefir water will never become high in alcoholic levels, the longer it ferments the slightly higher it will become. It averages .5 - 1% ABV. To sell I must keep it at .5. If this is to sweet, in your home you can allow it to ferment away. Just keep tasting it until it is where you like it and the replace it in the fridge to slow down or even stop the fermentation process. At these levels of sugars there should be no risks to anyone, even if diabetic.
Probiotic drinks don't need to be consumed in high volume. You can get all the microorganisms you need to start balancing your gut biome in a swig a day. Then maybe move it up to two swigs two different times of the day. If you love the taste there is no harm in drinking 2-4 oz at a time. But you can see that a 16 oz bottle for only 5 dollars can get you what you need daily for 8 days or more. The bottled Kefir will last that long.
