•••••••Breakfast was delish! Chorizo and eggs on sourdough toast, vegan style. So good and filling.

I like using vegan ingredients when possible to give my body a break from the inflammation that animal products cause. And I opted for sourdough bread because it’s an anti-inflammatory bread that has prebiotics and is easier to digest. Apparently not all breads are equal.

Ingredients:
Avocado
Vegan chorizo
Organic sprouted tofu
Sourdough bread
About ¼ cup chopped onion
½ can black beans, drained
About 1 Tbsp Nutritional yeast
Salt, pepper, smoked paprika

**To serve 3-4 people, use half of both the vegan chorizo package and the tofu

Directions:
Start sauteing the onions in some oil. Crumble the tofu and the chorizo and add to the pan once the onions are lightly browned. Add salt, pepper, smoked paprika and other desired seasonings to taste. Mix well in the frying pan. Add the black beans. Remember the nutritional yeast to give it a cheesy flavor. Serve over sourdough toast and add slices of avocado. Most importantly, enjoy!
