Buffalo Chicken Wing Quesadillas… entirely from scratch. Like, I made my own tortillas. Lemme tell you guys, it was easier than I could have possibly imagined!
Tortilla recipe- (I made 6 tortillas)
1 1/2 Cup Flour
2 Tsp Kosher Salt
2 1/2 Tbs Butter
3/4 tsp Baking Powder
~1/3 Cup Hot Water
Mix until it’s flaky, let it sit in a ball covered for about 15 mins, portion into tiny little balls, roll them paper thin and quickly toast them in a hot (lightly oiled) pan. They take seconds to quick and are INCREDIBLE. Do not cook them until crispy, think store soft tortilla texture- you’ll crisp them when you assemble it all.
Filling-
1 chicken breast small diced
1/2 Cup Hot Sauce
1 Stick Salted Butter
1 Block Cream Cheese
3 tbs Minced Garlic
Colby Jack Cheese (measure with your heart)
Cook chicken and garlic in hot sauce and butter until it cooks down and is shredding. Mix in cream cheese and let it reduce to become a thick filling.
Assembly-
Take tortilla, spread Colby cheese on it gently spread a healthy layer of filling on, top with more Colby and then another tortilla. Then crisp those puppies until it all melts together and boom!
