Cajun Beans
4-cups pinto beans or black eyed peas(uncooked)
1- Bell Pepper,diced
1- Onion,diced
2 lbs. Smoked Sausage,sliced
1- TBS. Cajun seasoning
Salt and pepper to taste
Simmer beans for 2 hrs. Add seasoning,onions and bell pepper. Partially fry sausage,then add to beans. Let cook for another 1 1\2- 2 hrs.
Serve with fried potatoes and corn bread. YUM!!!

Chicken Curry

1-Onion, chopped fine
8-stalks celery diced fine
1-Heaping TB. Curry
1-Cup Chicken Stock
2-TB. Honey
Salt to taste
1- Shredded Rotisserie Chicken
1- Can Coconut Milk
Mix together and simmer 30 minutes
Squeeze 1\2 a Lime and sq**rt of Sriracha on top.
Serve over rice or it is also good rolled in a tortilla. Just simmer a little longer to reduce liquid or use slotted spoon to dip on to tortillas.

I've made this cake for well over 50 years. The recipe was published in our local news paper. I'm a sucker for trying odd sounding recipes. So of course I had to try it.
It quickly became a family favorite! It was published as Happy Hour cake but my family calls it Beer Cake.
Over ripe bananas give the best flavor, but if you don't have them ripe bananas will be fine. This cake is best when it is made the night before serving. If you can wait that long!

Beer Cake
Pre heat oven 350°

1 1/2 cups of sugar
2 well beaten eggs
1 tsp.cloves
1 tsp.cinnamon
2 tsp. nutmeg
2 3/4 cups flour
1 1/2 cups mashed bananas (this is usually 3 bananas)
1 tsp. vanilla
3/4 cup shortening
1 tsp. salt
1 tsp. Soda
12oz.cool beer

Cream shortening and sugar. Mix in dry ingredients. Mix in well beaten eggs.Add bananas and vanilla, mix well. (Here comes the fun part) blend in the beer. It foams! How cool is that! Can't help it. Takes very little to entertain me!
Pour into greased and floured 9 x13 pan
Bake 45-60 mins.Or until toothpick inserted into the center comes out clean.
Frost with cream cheese frosting.

Cream Cheese Frosting

2 cups powdered sugar (may have to add more)
3 Tbs. butter
8oz. soft cream cheese
1tsp. Vanilla
4-5 tsp.milk or strong coffee(enough to make a frosting consistently)
Or take the easy way out and buy a tub of Cream Cheese Frosting. lol

This is so good!!!

Peaches and Cream Cobbler

Preheat oven350°
2 Tbs. melted butter
3/4 cup milk
1 beaten egg
2 cups drained peaches (save syrup)
3/4 cup sugar
3/4 tsp.baking powder
3/4 cup flour
1 large box instant vanilla pudding
8 oz. Softened cream cheese

In a large bowl combine all ingredients(EXCEPT SUGAR)and stir thoroughly. Pour into buttered oblong baking dish. Place peaches on top. Whip cream cheese and sugar. Spoon on top of peaches. Bake 350° for 45 mins.

How about we have a yummy casserole for dinner! This is one of my families favorites.

Enchilada Casserole

Preheat oven 375°
1 lb. Shredded Cheese
12-18 Flour Tortillas
2 cans Cheddar Cheese Soup
1 Small Onion
2 lb. Hamburger
2 Cans Chili without Beans
Salt
1 pkg. Williams Chili Seasoning
Brown onions and meat in a little oil.Season with salt to taste. Add chili, soup and Williams seasoning simmer. Put 1-2 Tbs.of mixture in center of tortilla roll and place folded side down in shallow pan. Add remaining chili mixture over the top. Top with shredded cheese. Bake 375° 15 mins. or until bubbly around edges. Freezes well but don't add cheese until ready to bake.

Recently one of my granddaughters asked if I would share my banana bread recipe. She loved it as a child. Now she would like to make it for her family. My heart filled with joy over this request!

I decided to start a blog in hopes that others will enjoy my recipes and occasional trip down memory lane.

I'm from Oklahoma the Sooner State, hence the name of my blog. We are called the Sooner State because some settlers snuck in and posted their claims prior to the official start of the land run. This trait has been passed down for generations. We would rather be sooner for an event rather than later!

Banana Bread
Pre heat oven to 350°
1/2 cup shortening
1cup sugar
2 eggs
3-4 bananas (mashed)
2cups flour
1tsp.baking soda
1\4tsp.salt
