Pomegranate Flatbread

Ingredients:
2 flatbreads or naan, 1 cup ricotta (or goat cheese), ½ cup shredded mozzarella or fontina, ¼ cup crumbled feta (optional), ½ cup pomegranate seeds, ¼ cup chopped pistachios, 1–2 tbsp fresh rosemary, 2 tbsp honey, olive oil for brushing, salt & pepper.
Directions:
Preheat oven to 400°F. Brush flatbreads lightly with olive oil. Spread ricotta evenly, top with mozzarella (and feta if using). Sprinkle pomegranate seeds, pistachios, and rosemary. Bake 8–10 minutes until cheese melts. Drizzle with honey, season with salt & pepper, and serve warm.
