St. Louis-style ribs are king. They are the most flavorful cut of ribs.
Ribs should have a nice smoke ring and pull clean off the bone.
Ribs should not fall off the bone. If all of the meat slides off with the first bite, they’re too tender. I call that pulled pork with a bone. Judges are looking for a bit of bite to the meat. If the meat doesn't pull away from the bone, it's undercooked.
When smoking your ribs remove the membrane from the back of your ribs. It will help them pull from the bone more gently. No one wants to chew on the plasticky back skin.
Sauce should be applied toward the end of cooking. Ribs swimming in sauce after they are cooked in a choice but not necessary.
