Ingredients:

- Kohlrabi: 500g
- Potatoes 🥔: 300g
- Leek: 1 pc.
- Basil🌿: 1 bunch
- Cream 18%: 100 ml
- Flour: 70g
- Nutmeg
- Cheddar cheese 🧀: 200g
- Vegetable stock cube: 1 pc.
- Parsley🌱
- Olive oil
- Salt, pepper
- Butter: 25g
- Lemon🍋: 1/2 pc

Method:

1. Prepare kohlrabi and potatoes:

Peel the kohlrabi and potatoes and cut them into small cubes. Cook in boiling water for 15–20 minutes until soft.

2. Prepare the sauce:

Pour 400 ml of water out of the pot, add the stock cube, and top up with the cabbage water. Stir in the butter, cream, flour, salt, and lemon juice, and let it cook for 10 minutes. Chop the basil leaves, add them, and stir the sauce until smooth.

3. Gratin layers:

Grease a baking dish with oil, add the kohlrabi and potatoes, pour over the sauce and stir. Sprinkle with cheddar cheese and bake at 180°C (356°F) for 25 minutes. Then bake for another 10 minutes, until the cheese is golden brown.

4. Serve:

Sprinkle with fresh parsley and let cool briefly before serving.

LongHorn-Style Brussels Sprouts Recipe

Ingredients:
• 1 lb (500 g) Brussels sprouts
• 1 red onion
• 4 oz (120 g) pecans
• 1 whole garlic head + 2 cloves
• 3 tbsp olive oil
• 2 tbsp low-sodium soy sauce
• 1 tbsp honey
• 1 oz (30 ml) melted butter
• 1 lemon
• 1 cup (200 g) plain yogurt
• 1 bunch fresh cilantro
• 1/2 cup (100 g) basmati rice
• 1 cup (200 ml) vegetable broth
• Salt and black pepper, to taste
• Mediterranean herbs, to taste
• 1/2 tsp hot paprika (optional)



Instructions:
1. Preheat your oven to 300°F (150°C). Trim the ends off the Brussels sprouts, remove any outer leaves, and cut them in half. Boil in salted water for 3 minutes, then drain.
2. Slice the top off the garlic head, drizzle with olive oil, sprinkle with herbs, wrap in foil, and roast for 30 minutes until soft.
3. Chop the red onion and mince the garlic cloves. Roughly chop the pecans.
4. In a small bowl, mix olive oil, soy sauce, and honey to make the marinade.
5. Spread the Brussels sprouts and onion on a baking sheet. Pour over the marinade and toss well. Roast at 400°F (200°C) for about 20 minutes, until golden and slightly crispy.
6. Drizzle the roasted Brussels sprouts with melted butter and fresh lemon juice. Sprinkle with chopped cilantro.
7. To make the rice: heat a little oil in a pan, add the rice, and lightly toast it. Pour in the vegetable broth, cover, and cook on low heat for about 10 minutes, or until tender.
8. For the sauce: squeeze the roasted garlic into a bowl. Add yogurt, chopped cilantro, salt, pepper, Mediterranean herbs, and hot paprika. Mix until smooth.
9. Serve the Brussels sprouts over rice with the creamy garlic sauce on top.

1 medium carrot (200g)
4 eggs

6 tbsp all-purpose flour
4 tbsp vegetable oil
1/2 tsp baking powder
7 oz (200g) cheddar cheese
Salt, pepper, and Mediterranean herbs to taste

HOW TO MAKE IT

1. Cut broccoli and cauliflower into small florets, then grate them on a coarse grater.
2. Finely chop the carrot and leek. Fry in vegetable oil until soft and golden.
3. Combine the fried vegetables with the grated broccoli and cauliflower. Mix well.
4. In a separate bowl, whisk together the eggs, yogurt, flour, oil, and baking powder until smooth.
5. Pour the egg mixture over the vegetables and stir everything together.
6. Bake at 350°F (180°C) for 20 minutes.

Creamy Roasted Tomato Soup with Crispy Cheesy Toast

Ingredients:
• 1 lb cherry tomatoes
• 1 sweet pepper
• 1 onion
• 2 heads of garlic
• 1 tsp Italian seasoning
• Salt, to taste
• Olive oil
• 1/3 cup grated Parmesan cheese
• 3 sprigs fresh thyme
• 3 sprigs fresh basil
• 1/2 cup light cream (18%)
• 3 slices Cheddar cheese
• 2 slices pumpkin seed bread
• Fresh cilantro (for garnish oil)

Instructions:

Preheat your oven to 400°F (200°C). Add the cherry tomatoes, chopped onion, sweet pepper, and whole garlic heads. Drizzle with olive oil, sprinkle with Italian seasoning and salt, and toss in the thyme.

Roast for 25–30 minutes, until the vegetables are soft and slightly caramelized.

Transfer the roasted vegetables to a blender. Add the cream, fresh basil leaves, Parmesan cheese, and a little broth if needed to thin it out. Blend until smooth and creamy.

For the toast, top the bread slices with Cheddar cheese and toast until golden and crispy. Drizzle with herb-infused olive oil if desired.

Crispy Avocado Cones

Ingredients for 10 pcs:

🫓5 pcs tortillas
🥑1 pc avocado
🧅1 tbsp finely diced red onion
🌿1 tbsp chopped cilantro
🍅1 tbsp chopped tomatoes
🧂Salt, pepper
🌶️1/4 tsp smoked paprika
🍋1 tbsp lime juice
🌳Pistachio flour for decorating

Method:

Cut the tortillas lengthwise and roll up a corn. Fix it with toothpick.
Bake the corns in an air fryer for 5 minutes at 180C (350F)
Remove toothpicks and let them cool.
Mash the avocado with a fork, add chopped tomatoes, onion, cilantro, lime juice, salt and pepper to taste. Mix well.
Fill the cones with guacomole and sprinkle with chopped pistachios or pumpkin seeds.
