Ingredients:
- Kohlrabi: 500g
- Potatoes 🥔: 300g
- Leek: 1 pc.
- Basil🌿: 1 bunch
- Cream 18%: 100 ml
- Flour: 70g
- Nutmeg
- Cheddar cheese 🧀: 200g
- Vegetable stock cube: 1 pc.
- Parsley🌱
- Olive oil
- Salt, pepper
- Butter: 25g
- Lemon🍋: 1/2 pc
Method:
1. Prepare kohlrabi and potatoes:
Peel the kohlrabi and potatoes and cut them into small cubes. Cook in boiling water for 15–20 minutes until soft.
2. Prepare the sauce:
Pour 400 ml of water out of the pot, add the stock cube, and top up with the cabbage water. Stir in the butter, cream, flour, salt, and lemon juice, and let it cook for 10 minutes. Chop the basil leaves, add them, and stir the sauce until smooth.
3. Gratin layers:
Grease a baking dish with oil, add the kohlrabi and potatoes, pour over the sauce and stir. Sprinkle with cheddar cheese and bake at 180°C (356°F) for 25 minutes. Then bake for another 10 minutes, until the cheese is golden brown.
4. Serve:
Sprinkle with fresh parsley and let cool briefly before serving.
