PART I….
Essential foods I use weekly BUT do not buy at the store anymore!
~Butter~
• Heavy cream
• Salt (optional)
• Garlic, or any other herbs you’d like to add (also optional)
Pour heavy cream into stand mixer & turn on lowest soeed, slowly increasing every few min. By doing so, this avoids the excess splashing. Let mix for 20-25 min. Once butter separates from buttermilk, rinse under cold water until it runs clear. Reserve buttermilk for other recipes. Season with salt or other herbs. Refrigerate for up to 2 weeks OR wrap individually in parchment paper & freeze.
~Taco Seasoning~
• 1/2 c chili powder
• 4 tbsp cumin
• 2 tbsp smoked paprika
• 2 tbsp salt
• 2 tsp dried oregano
• 1 1/2 tsp black pepper
• 2 tsp garlic powder
• 2 tsp onion powder
• 1/2-1 tsp cayenne pepper
• 1/2 tsp cornstarch for thicker sauce (optional)
Mix everything well & store in air tight container. Adding an oxygen absorber to jar helps to prevent moisture.
To Use:
Add 2 tbsp seasoning per 1 lb protein + 1/2-3/4 c water. Simmer until thickened.
~Chocolate Syrup~
• 1/3 c cocoa powder
• 1 c water
• 2 c cane sugar
• 1 tsp vanilla
• 1 tsp butter
• Pinch of salt
Combine cocoa powder, water, sugar, & salt in saucepan. Stir well. Bring to boil over med/low heat, stirring constantly or it will boil over. Boil for 5 min, then remove from heat. It will be very runny, but will thicken as it cools. Add vanilla + butter (for creaminess). Let cool for a few minutes before adding to a jar. Refrigerate until ready. It’ll become thicker when stored in the fridge. Just give it a little warmth, and it’ll be right back where you need it.
~Ketchup~
12 oz tomato paste
1/2 c distilled white vinegar
1/2 c raw honey
1/2 c water
2 tsp Worcestershire Sauce
1/2 tsp garlic powder
1/2 tsp onion powder
Pinch of salt
Combine all to a saucepan & simmer on low heat for 5-7 min. Transfer to airtight jar. Refrigerate 4-5 hrs until completely cool before using. Lasts up to 3 weeks.
~Baking Powder~
• 2 tbsp cream of tartar
• 1 tbsp baking soda
• 1 tbsp corn starch
Mix & store in airtight container.
~ Ranch Seasoning~
• 1/2 c dried dill w**d
• 1/2 c parsley
• 1/4 c garlic powder
• 1/4 c dried onion flakes
• 1/4 c onion powder
• 2 tbsp dried chives
• 1 3/4 tbsp fine salt
• 1 tbsp black pepper
Combine all ingredients in airtight container. Give a good shake. Good up to a year! Add oxygen absorber and vacuum seal to preserve best flavor.
For ranch dressing:
Mix 1/2 c of each (milk, mayo, sour cream) + 1 tbsp dry ranch mix.
