Chicken & spinach curry with whole grain rice & garlic & coriander naan bread.
Ingredients:
* 3 chicken breasts
* 1 large onion
* 2 cloves of garlic grated/finely chopped
* 5cm of ginger grated
* 2 tbsp mild curry powder… or hotter if you wish
* 1 tbsp ground coriander
* ½ tbsp ground cumin
* 1 tsp paprika
* ½ tsp ground cinnamon
* Salt & pepper
* 2 tbsp tomato puree
* 400g tin finely chopped tomatoes
* 240ml chicken stock
* 400ml tin full fat coconut milk
* 1 tbsp cornflour mixed with 2 tbsp cold water to make a paste (this is optional, depending how thick you like your curry sauce!)
* Two large handfuls of baby spinach
Method:
1. add a splash of oil to your pan & add the chicken. Cook for 5 mins until sealed.
2. Add the onions to the chicken and cook for a few mins.
3. Add the garlic, ginger, curry powder, ground coriander, cumin, paprika, cinnamon, salt and pepper. Mix together well and cook for a minute.
4. Add the tomato puree, tinned tomatoes, stock and coconut milk.
5. Bring to a gentle bubble, then simmer, stirring occasionally for 10 minutes or until the chicken is cooked through.
6. If you want your sauce thicker, add the cornflour paste now.
7. Add the spinach & stir until wilted.
I served ours with whole grain rice, topped to coriander & chilli flakes.
