Im not usually one for making pies because I’m basically useless at baking but when I seen this chicken and mushroom pie recipe from his new I thought surely that’s easy enough for even me to do 😂

I think I did a pretty decent job of it if I do say so myself… and it tasted pretty delicious too! Definitely another one I would add to the meal plan again in the future!

What a genius way to make a pie by cutting the top off a puff pastry sheet! You could do this method with other fillings too!

Chorizo Spanish pork!
Served with savoury rice 🍚

Ingredients:
* pork chops
* olive oil
* 1 onion chopped
* Chorizo sausage - skin removed and diced
* 1 bell pepper chopped
* 3 cloves garlic, grated/finely chopped
* 1 tablespoon smoked paprika
* 150ml chicken stock
* 1 tin chopped tomatoes
* 1 bay leaf

Method:
* Place a large pan over medium heat. Add the oil and once hot, add the chorizo & it cook over medium heat until the sausage is crisp in places.

* Use a slotted spoon to remove the chorizo from the pan, leaving the oil behind.

* Add the pork chops and cook, turning occasionally. 

* Remove the chops from the pan to a plate and cover loosely with foil.

* Add the olive oil to the same pa , then fry the onions and bell pepper until softened.

* Sprinkle over the smoked paprika, add the garlic, add the stock, tinned tomatoes & bayleaf. Season with salt & pepper. Cook for 5 mins

* Return the chorizo & pork back to the pan, including any juices on the plate. Cover the pan and cook for a further 5 mins on a medium heat.

Bacon, spinach & cheese gnocchi 🥓

Last week was the first time I tried gnocchi & I blooming love it! I should of tried it sooner 😂

Ingredients:
* Gnocchi - I used a 500g bag
* 5 rashers of bacon
* 2 shallots (1 small red onion) finely chopped
* 2 or 3 cloves of garlic - grated or finely chopped
* 1 teaspoon Italian seasoning
* 2 large tomatoes diced
* 150ml vegetable or chicken stock
* 150ml double cream
* Parmesan cheese - I forgot to measure this but a good handful worth and extra to top when served
* 1 large handful of fresh spinach

Method:

1. In a large pot of boiling water, cook gnocchi for approx 3 mins. Drain and set aside.
2. Cut the bacon and fry until crispy then set aside.
3. In the same pan over medium heat, sauté shallot (or onion) and garlic. Add a extra splash of olive oil if needed. Add gnocchi and brown them on all sides for 5 minutes. Season with Italian seasoning
4. Add tomato, cook for one minute, then stir in the stock. Simmer for 1-2 minutes, add cream and grated parmesan and cook for one-minute stirring continuously until smooth.
5. Stir in spinach, let it wilt, add bacon back to the pan. Serve and top with grated parmesan.

Cheesy chorizo chicken!

Another easy one tray bake with little ingredients needed!

Ingredients:
* Baby potatoes cut in 1/2
* Chorizo slices
* Brie cut into slices
* Tomatoes
* Olive oil
* Italian seasoning
* Dried basil (or fresh if you have it)
* Chicken breasts with deep cuts in but not cut through to the other side

Method:
* preheat your oven to 200 degrees
* Put the cut baby potatoes into a oven proof dish, coat with olive oil & sprinkle with Italian seasoning. Put them in the oven for 30 mins.
* While the potatoes are cooking, prep the chicken. Place chorizo slices, tomato slices and Brie slices into each slit of the chicken breast. Sprinkle dried basil over the top of the chicken. If you have fresh basil, it would be nice popped into the slits of the chicken too!
* When the potatoes are golden, place the chicken breast on top of the oven and return to the oven for approx 20-25 mins until chicken is cooked.

Serve and enjoy! 😋

Chicken & spinach curry with whole grain rice & garlic & coriander naan bread.

Ingredients:
* 3 chicken breasts
* 1 large onion
* 2 cloves of garlic grated/finely chopped
* 5cm of ginger grated
* 2 tbsp mild curry powder… or hotter if you wish
* 1 tbsp ground coriander
* ½ tbsp ground cumin
* 1 tsp paprika
* ½ tsp ground cinnamon
* Salt & pepper
* 2 tbsp tomato puree
* 400g tin finely chopped tomatoes
* 240ml chicken stock
* 400ml tin full fat coconut milk
* 1 tbsp cornflour mixed with 2 tbsp cold water to make a paste (this is optional, depending how thick you like your curry sauce!)
* Two large handfuls of baby spinach

Method:
1. add a splash of oil to your pan & add the chicken. Cook for 5 mins until sealed.
2. Add the onions to the chicken and cook for a few mins.
3. Add the garlic, ginger, curry powder, ground coriander, cumin, paprika, cinnamon, salt and pepper. Mix together well and cook for a minute.
4. Add the tomato puree, tinned tomatoes, stock and coconut milk.
5. Bring to a gentle bubble, then simmer, stirring occasionally for 10 minutes or until the chicken is cooked through.
6. If you want your sauce thicker, add the cornflour paste now.
7. Add the spinach & stir until wilted.

I served ours with whole grain rice, topped to coriander & chilli flakes.

Chicken gyros with tzatziki dressing and sweet potato fries.

For the marinade for the chicken:
* 2 Tablespoons olive oil
* 3 tbsp Greek yoghurt
* 2 Tablespoons lemon juice
* 2 teaspoons smoked paprika (or regular)
* 2 teaspoons cumin
* 2 cloves garlic , minced
* 1 teaspoon ground tumeric
* 1 teaspoon ground coriander
* 1 teaspoon Kosher salt
* 1/4 teaspoon freshly ground black pepper
* 1/4 teaspoon onion powder
* 1/4 teaspoon ground cinnamon
* 1/2 teaspoon crushed red pepper flakes , or more, to taste

Mix all of the above together and leave the chicken to marinade for a good few hours. I left our chicken for 7 hours 🙂 I marinated 3 large chicken breasts.
I then cooked them on the bbq and cut into bite size pieces when cooked.

For the tzatziki sauce:
* 1 cup plain Greek yogurt
* 2 cloves garlic , minced
* 1/2 teaspoon dried dill
* 2 teaspoon lemon juice
* salt and freshly ground black pepper , to taste
* 1 small piece of english cucumber , peeled and finely diced
Mix all of the above together and drizzle over your gyros!

I served the gyros on the flat breads with lettuce, tomato, cucumber and onion.

Lamb tray bake!
I love tray bakes… just chuck it all together, easy to do, uses up all them veggies and minimal washing up after!

In ours today we had:
Carrots
Red onion
Garlic
Potatoes
Courgette
Pepper
Italian herbs
Olive oil

I put all the above together, mixed well then baked in the oven for 20 mins on 200

Then I placed 2 lamb steaks on top with a bit of fresh mint and baked for a further 10 mins.

Turned out really nice! .

SAUSAGE TUSCAN PASTA!
I love Tuscan pasta and usually have it with salmon or chicken but thought I’d mix it up a little today with sausage meat and it did not disappoint!

Ingredients:
* Sausages removed from the skins - I used 6
* 3 garlic cloves grated/finely chopped
* Sun-dried tomatoes - I used a medium sized jar worth.
* 150ml double cream
* 200ml chicken stock
* 1/2 tsp Dijon mustard
* 1 tsp flour
* 1 tsp lemon juice
* Spinach
* Spaghetti or whatever pasta you wish!
* Salt & pepper to taste
* Parmesan cheese to top!

Method:
* remove the skin from the sausages and fry on a medium heat, crumbling the sausages into smaller pieces. Cook for approx 5 mins until nice and brown on the outside then remove from the pan.
* Add garlic, chicken stock, flour, Dijon mustard & lemon juice to the pan and mix well together. Cook for a minute or two.
* Add the sun-dried tomatoes. I actually chopped my tomatoes up a little rather than having huge chunks but that’s personal preference 🙂 and cream. Mix well together and cook for 2-3 mins.
* Add the sausages back into the pan, mix together and cook until the sauce starts to thicken up a little.
* Stir in the spinach and cook for a minute for it to wilt. Season with salt and pepper.
* Serve up and top with Parmesan cheese. Enjoy!

Doesn’t take too long to make but very tasty!
