If you haven’t tried the Smashed Burger Tacos, this is the sign to give it a try! And it’s very easy to make 🌮 🌮 🌮

The minced beef can be seasoned with as little as salt and pepper, but if you are more courageous, add garlic and onion powder, sweet and smoked paprika, cajun or cumin.

Add the dressing of choice or make one from scratch. I made mine with greek yogurt, mayonnaise, sriracha, dijon mustard, minced shallot, minced pickled cucumber and salt.

A good flat bread and homemade fries never disappoint, but just to be balanced, add some fresh salad leaves and pickled red onions 🥰

🥢 Teriyaki Beef with Colourful Veggies

500g beef thinly sliced

Marinade:
1 tbsp soy sauce
½ tsp sesame oil
½ tsp baking soda
1 tbsp cornstarch
1 tbsp rice vinegar

Vegetables:
1 onion diced
1 red pepper diced
1 yellow pepper diced
2–3 cloves garlic sliced

Sauce:
2 tbsp soy sauce
2 tbsp teriyaki sauce
1 tbsp Worcestershire sauce
1 tbsp oyster sauce
1 tsp brown sugar
2 cloves garlic (minced)
½ tsp gochugaru
1 tsp cornstarch + 3 tbsp water

Green onions for garnishing

Marinate beef for at least 30 min
Stir-fry the veggies, then remove
Cook beef in same pan on high heat
Add sauce and bring to boil 1–2 min until glossy
Add veggies back, mix well
Finish with green onions & serve with rice or noodles 🔥

The smell of freshly baked bread on a rainy day is a soothing balm for the soul 😌

A little bit warm, crunchy crust and fluffy inside, spread with French butter and a sprinkle of Maldon Salt, that is the ultimate beloved comfort food ❤️

Now I can enjoy this often, as my bread machine does all the hard work 🥰

There is something fascinating about preparing some ingredients from scratch 😌

I’ve made for the first time fresh cow cheese from sour milk, which was aged in the fridge for some time. The double cream was removed and already used in other cooking. I poured it in a pot and kept in on low heat until the cheese started to separate from the whey. I turned off the heat and transfer it into a cheese fabric to drain all the whey for a couple of hours. The cheese and whey are best kept in the fridge in airtight containers until further cooking.

For the cheese, my meal plan was to mix it with homemade noodles, fried bacon and homemade smoked sausages. I cannot fully describe the taste, but this one brings back childhood memories 🥰

The whey I will use in cooking a seasonal soup with fresh lettuce, post will follow soon.

In the second pot on the stove, bottom on the photo, there is fresh cow milk which I boil, cool down and keep in fridge for coffee and cooking.

We get every week fresh milk from a nearby farm, and that ensures to always have boiled milk, sour milk, sour cream, cream cheese and cheese from a sustainable source ❤️

Crepes with Cinnamon Apples Filling, Vanilla Bourbon Ice Cream & Caramel Sauce 🥞

Crepes
225g flour • 3 eggs • 450ml milk • 1 tsp lemon zest
Whisk flour + eggs, gradually add milk until smooth. Add zest and rest 30 min. Cook thin crepes in a lightly greased pan.

Apple Filling
6 apples (peeled & diced) • 4 tbsp sugar • 1 tbsp butter • 1 tsp cinnamon • ½ tsp nutmeg
Cook on low for 10–15 min until soft and slightly caramelized.

Assemble
Spread filling over half a crepe → fold in half → fold again (triangle).
Top with vanilla ice cream & drizzle caramel sauce.

Serve warm for a perfectly melty experience! 🤤

Pasta with chicken hearts & gizzards

Ingredients:
• 1 kg chicken hearts & gizzards
• 1 tbsp goose fat
• 2 large onions
• 3 garlic cloves
• 1 kapia pepper (or red bell pepper)
• 1 tbsp pepper paste
• 1 cup water
• salt & pepper
• 400 g pasta
• fresh parsley

Instructions:
1. Clean the hearts and gizzards. Cut the gizzards in half and lightly score the hearts.
2. Sauté the finely chopped onion, garlic, and pepper in goose fat.
3. Add the hearts and gizzards and stir well.
4. Add the pepper paste, salt, and pepper, then pour in the water.
5. Simmer on low heat for about 2 hours, until tender.
6. Cook the pasta separately.
7. Toss the pasta with the sauce and serve with fresh parsley.

Paste cu inimi și pipote de pui

Ingrediente:
• 1 kg inimi și pipote de pui
• 1 lingură grăsime de gâscă
• 2 cepe mari
• 3 căței de usturoi
• 1 ardei kapia
• 1 lingură pastă de ardei
• 1 cană de apă
• sare & piper
• 400 g paste
• pătrunjel verde

Mod de preparare:
1. Curăță bine inimile și pipotele. Taie pipotele în două și crestează ușor inimile.
2. Călește ceapa, usturoiul și ardeiul tocate mărunt în grăsimea de gâscă.
3. Adaugă inimile și pipotele și amestecă bine.
4. Pune pasta de ardei, sarea și piperul, apoi toarnă apa.
5. Lasă la foc mic ~2 ore, până devin fragede.
6. Fierbe pastele separat.
7. Amestecă pastele cu sosul și servește cu pătrunjel proaspăt.
